Tiramisu I

This recipe was a flop for me. I haven't had a true "flop" in some time. I will never dip ladyfingers in coffee again. They were wet and soggy. My biggest problem was that the mascarpone seemed to curdle. It was at room temperature and the egg yolks were from the fridge. Is this the problem? Or did I mix it too long. If someone knows, please let me know.

White Chili with Ground Turkey

This was good. The recipe didn't say whether or not to rinse/drain the beans, so I rinsed/drained the first two cans and then put the contents of the 3rd can in the blender. I thought five cups of chicken broth would have been too much, so I just used one 14.5 ounce can. As the other reviewers said, I only used 1/2 t of cinnamon. I'll make this again.

Cranberry-Pumpkin Cookies

I did not care for these cookies. I thought they were rather 'flour-y' and somewhat tasteless. They weren't very sweet, so if you want a sweet cookie, pass on these. I followed the recipe exactly.

Spanish Rice Bake

I've made this twice now. As someone suggested, I left out the brown sugar. I also prepared it in one sauce pan and I didn't bother to bake it. We added the cheese at the table. It's nourishing, doesn't take a lot of preparation or use more than one piece of cookware. It will be my go-to for a hot meal without a lot of effort.

Elderberry Pie II

I was pleased with the way this pie turned out. It was crunchy as someone said which was a bit surprising since the fruit off the tree is so fragile. This is a crunch similar to the seeds of a blackberry. I'll make again. It was good with a scoop of vanilla ice cream.

Mama's Asian Chicken and Rice

I followed this recipe exactly. I prepared the sauce the night before to save time. I ended up decreasing the amount of chicken by half so there'd be enough sauce. I will definitely make this again.

Broccoli and Ramen Noodle Salad

I rated this a five for several different reasons. First, ease of preparation. Our grocery only had a 12 oz. package of broccoli slaw so I decreased the ramen noodles proportionately. I kept everything else the same thinking a little extra dressing wouldn't hurt. Second, the taste was amazing. I worried that it would be dry, but it wasn't. Third, this has great crunch. It fulfills that human need to chew! Since I was only serving two of us, I sprinkled the nuts on individual servings. This one's a keeper!

Rhubarb Margarita

Since I have a Vitamix, I followed another reviewer's suggestion and just put everything in there and turned on the machine. I added salt to the rim of the glass, but returned to the kitchen to wipe this off because it didn't suit my taste. I returned to the kitchen a second time to add a squirt each of lemon juice and agave nectar. After these adjustments it was quite good. I don't think the rhubarb by itself has enough flavor.

Indian Spiced Rice Treats

These were good. I cut the recipe in half and I used salted cashews and a blend of dried fruit. I didn't think the salt made much difference. I've made rice cereal treats many times. After the marshmallow and butter have completely melted, I turn the stove as low as it will go (we have gas)and mix in the dry ingredients. The marshmallow doesn't set up as quickly so mixing is easier and less is stuck to the pan. I use a pan with a wide bottom. Will make again soon.
