Chipotle Bean Burritos

These had a nice flavor. The one thing I will say is that I don't know if it was worth the trouble of using the veggie burger patties vs. just making bean and rice burritos or using a meat substitute available in the form of "crumbles." My veggie burgers were frozen so I had to cook them and then dice them up.

Apple Cake VI

This was yummy! In texture, it is very similar to a coffee cake. Since other reviewers were having trouble with their apples sinking, I chose to grate mine- this worked perfectly. Also- I did not have any OJ on hand so I subbed lemon juice which worked out just fine as well. We made a homemade caramel sauce to drizzle over the top- everyone enjoyed this and we will make it again. Thanks!

White Sauce

This recipe saved my bacon! I had put together a chicken and green chili casserole but it came out dry. I used this white sauce as a base and then mixed in some diced jalepenos and chicken broth- voila! The casserole was saved. The great thing about this sauce is it makes a good "base" and you can add things to it from there.

Chocolate Drop Cookies II

My husband describes these as "addictive!" I didn't have margarine on hand, so I substituted butter. The cookies came out perfectly soft. Next time, I do plan to use small marshmellows instead of going thru the trouble of cutting the large ones in half. For me, the frosting was too thick to spread as written. So, I just added more heavy cream until I got the texture I liked. These are RICH and satisfy the choc-o-holic in me! We will keep this recipe- thanks!

Garlic Croutons

Wow- the biggest challenge with these croutons is actually getting them on the salad without eating them all! :) I melted the butter and sauteed with garlic in a skillet and then poured it over the cubed bread on a baking sheet. After 15 minutes, I pulled them out of the oven and stirred and added some garlic salt and parsley- yum! They turned out perfect.

Sauteed Apples

This recipe confirmed what I already thought to be true- the way to a man's heart is through cinnamon and apples! :) These were absolutely delicious as a dessert served warm over vanilla ice cream. You can spoon a little of the extra sauce on top and it tastes delicious. I did add about a tablespoon of butterscotch schnapps to my apples just for a little extra flavor. This was delicious- thanks!

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

Everyone really enjoyed this recipe! I made it exactly as written except to add more fresh basil (I probably used about 1/4 cup total). It had a delicious flavor and lovely presentation. I look forward to making it again!

Honey Ribs

We have made this recipe many times and we really enjoy it. My husband requests "crock pot ribs" when he wants a special meal- referring to this recipe! A couple tidbits I have gleaned over many times of making this: 1.) Do not make the mistake of getting beef back ribs- spend the extra money and get the pork baby back ribs. Otherwise, you will be disappointed with the greasiness of the ribs/sauce. 2.) As other reviewers suggest, take these out of the crock pot, drizzle with BBQ sauce, and crisp them up in your oven broiler for a few minutes prior to serving. This makes for an excellent texture and flavor.

Raspberry Salad Dressing II

This dressing would be perfect for a fruit salad. We found that the tartness of it made it a little strange on lettuce, however, it tasted really good to dip sliced apples into it! For me, I had to add more vinegar to get the texture like I wanted it (was too thick otherwise). I probably used about 1/8 cup red wine vinegar total. Otherwise- the flavor was good. We look forward to trying this on a mixed fruit salad in the future.

Roasted Beets 'n' Sweets

I really enjoyed this recipe. Next time, I will cut the pepper in half as it was a little too peppery for my taste. Also- it is very easy to toss the sweet potatoes/onion with the olive oil mixture in a bowl and not have to waste a ziplock bag. I did turn my oven broiler on for about 5 minutes at the end of the cooking time to allow the veggies to caramalize a bit. Yum! Thanks for sharing- we will make this again.

Unique Spinach Noodles

We really enjoyed these! Just a couple tips for anyone using a pasta maker to prepare these noodles (as I did). First- I didn't cook down the spinach. I used a food processor to chop the spinach and then added the water, egg, and flour and blended the dough. This saved on pans/prep time. I plan to do it this way again next time, however, I will omit the water or add more flour in order to create a more dry dough. Otherwise- flavor was very good. Thanks for sharing the recipe!

Summer Fresh Pasta with Tomatoes and Prosciutto

This recipe was exactly what I wanted it to be- fresh, light and delicious. I loved the use of garden fresh ingredients. I made homemade pasta noodles to put in it which was really good. Thanks for the recipe- we will make it again!

Addictive Sweet Potato Burritos

These were okay, but not as exciting as I had hoped. The only change I made was to use black beans as some other reviewers suggested. I thought that the sweetness from the sweet potatoes was a strange contrast to the saltiness of the black beans mixture. It was fun to experiment with something different, but I don't think I'll make these again.

Suzy's Mashed Red Potatoes

These were so creamy- the texture was absolutely perfect. I have always preferred mashed potatoes with the skins still on so this recipe was right up my ally. My potatoes needed to cook 15 minutes before they were "mashable." At the suggestion of other reviewers, I melted the butter and browned 2 cloves of fresh garlic in it to make these garlic mashed potatoes (SO good), although I am sure they would be delcious plain. Thanks- we will make these again!

Parmesan Cheese Twists

Brie en Croute

WOW- this was so elegant and delicious! I didn't have any leftover puff pastry, so I etched a design on top with a sharp knife and it still looked lovely. Thanks for a simple recipe that was a crowd pleaser- I will hang on to this one for sure!

Perfect Punch (non alcoholic)

This punch tasted great. I used a bag of frozen assorted berries which helped keep the punch cold and made for a pretty presentation, also. Thanks for sharing- I will make this one again!

Oatmeal Waffles

Unfortunatly, we just weren't that impressed with these. I followed the recipe exactly. The end result was a soggy waffle with not much flavor (if anything, a bit on the salty side...) Thanks for sharing a healthy recipe- but sad to say we won't make this one again.

Easy Beer Bread Mix

This was so quick and easy! Make sure to use a beer that is not too strong on the "hoppy" flavor (a light beer works best). This mix is also nice in a gift basket along with the recipe and baking instructions. Thanks- we will make this again.
