Taco Seasoning I

Reviewed: May 16, 2011
I didn't have a taco seasoning "packet" onhand, some I came here to look for a substitute. This was perfect. I actually liked it better than the store bought mix because it was a little spicier. My husband and I both really enjoyed it- thanks!

Apple Cake and Butter Sauce

Reviewed: May 10, 2011
This cake is the BEST. It is perfect just as written. The only thing I would say is watch cook time closely- for me it was done in more like 40 minutes. This is a definite keeper- thanks!

Molasses Cookies V

Reviewed: May 5, 2011
These were delicious! I made the recipe exactly as written. They remind me of a soft gingersnap. Per another reviewer, I made an "optional" cream cheese frosting to serve with them for added flavor, but most people said they liked them every bit as well without the frosting. Thanks for the recipe Rini- we really enjoyed these!

Slot Key Rolls

Reviewed: May 4, 2011
These were a good, basic roll. I really liked the yeast-y flavor. A couple notes: 1.) grease your bowls well; my rolls really stuck to my soup bowls. 2.) in hindsight, I don't know if it was worth the effort of using 6 separate soup bowls. It does make the size of the rolls nice and large, but I think a muffin pan would be much easier. Overall good recipe, though- thanks!

Saffron Basmati

Reviewed: May 3, 2011
Sarah- this was delicious! I followed this exactly as written. Next time I do think I'll cut back on the coriander just a bit as I grind mine from whole seed and a full teaspoon was pretty strong because of this. Otherwise, flavor was amazing.

Beer Can Chicken

Reviewed: May 3, 2011
Perfectly moist and delicious! We used a 24 oz. can of beer (poured out half) because it stood easier on the grill. We took the temp to 180 in the drumsticks which was about 165 in the rest of the chicken then pulled it off the grill, covered with foil and let it rest for awhile before slicing and serving. This one is a keeper- thanks!

Tangy Broccoli

Reviewed: Apr. 28, 2011
Made this for the Recipe Photo contest. 2 Tbsp. was a lot of dijon for just one head of broccoli for my taste. Even with cutting the dijon back quite a bit I found the flavors of the processed cheese (Velveeta) with the dijon to be a little strange.

Herbed Greek Roasted Potatoes with Feta Cheese

Reviewed: Apr. 26, 2011
YUM! At the suggestion of another reviewer, I lined my baking sheet with aluminum foil which made for very easy clean up. Flavor was excellent- thanks!

Kafta (BBQ)

Reviewed: Apr. 7, 2011
The flavor of this meat was delicious. The only thing I would change is adding bread crumbs next time. My meatballs did not want to stay on the skewers- too fragile. But, we ended up making hamburger patties that were so yummy. Thanks!

Eucharistic Bread

Reviewed: Apr. 6, 2011
I made this recipe for the Recipe Photo contest. It is wonderful! There are so many things about it that I love. It is very quick and easy to put together, doesn't require rising time, but still has all the tasty qualities of homemade bread (the crust is delicious!) Since it is slightly sweet, we really enjoyed it with some jam on top. We will make this many time again- thanks!

Holiday Left-Over Sweet Potato Cake

Reviewed: Apr. 1, 2011
Oh WOW- this was incredibly good! I had extra sweet potatoes (about 2 1/2 cups total), so I just left out the beer, which worked out fine. Also, since my sweet potatoes were not pre-sweetened, I used 1 cup white sugar and 1 cup brown sugar. Everyone LOVED this- thank you!!

Pudding Cake

Reviewed: Mar. 21, 2011
This was good! A couple suggestions: 1.) in hindsight, I really wish I had used a 9x9 pan. The layers were too thin in a 9x13. 2.) you can't just beat the milk and pudding together- the texture is really runny. I had to cook that layer to thicken it ( I did this in the microwave). Otherwise, flavor was yummy- thanks!

Sun-dried Tomatoes I

Reviewed: Mar. 21, 2011
I am so pleased with how this recipe turned out! Gone are my days of spending way too much money for store bought sun dried tomatoes. These are very flavorful and easy to make.

Artichoke Spinach Lasagna

Reviewed: Mar. 20, 2011
This was delicious! After reading other reviews, I didn't want the lasagna to be too moist, so I left out the vegetable broth. Otherwise, followed the recipe as written.

Citrus-Basil Vinaigrette

Reviewed: Mar. 18, 2011
I was a huge fan of this dressing! Per other reviews, I used canola oil instead of olive oil. Also, I increased the white wine vinegar to 1 Tbsp. I used lemon and lime but I know any combination of citrus would be good. I used dried basil as that is all I had on hand, but I can't wait to try it with fresh basil in the future. Thank you so much Karen- this makes store bought dressing seem so pointless....

Jim's Cheddar Onion Soda Bread

Reviewed: Mar. 18, 2011
I made this for the Recipe Group this week. It was delicious! I did find I needed to add about another 1/3 cup of buttermilk to get my dough to hold together well. I used yellow onion which had a nice flavor. A keeper for sure- thanks Keri and Jim!

Slow Cooker Creamy Potato Soup

Reviewed: Mar. 15, 2011
As other reviewers suggested, I browned my bacon, set is aside, and then browned my onion in the bacon grease. I then reserved the bacon for use as a topping as I prefer crispy bacon. Other than that, I followed the recipe as written. I did feel it needed about one more teaspoon of salt and another half teaspoon of pepper. Otherwise, very good. Thanks!

Easy OREO Truffles

Reviewed: Mar. 14, 2011
Oh WOW- these were amazing! I will say- take the advice of other reviewers and chill the oreo "balls" prior to dipping them as they are just too fragile to work with otherwise.

WOW! I had been saving this recipe for a special occasion. My friend had a baby and I thought this would be a perfect meal to take them. This is rich and delicious! Thanks for sharing.
