Key Lime Pie VII

I was very skeptical about this when I read the ingredients, and was very skeptical when I mixed up the filling and it smelled rather cheesy. But man, the flavor and the texture makes this the best key lime pie my husband and I have ever had! Definitely give this recipe a try- you'll be glad you did!

Stir-Fried Vegetables

Excellent starter recipe- I always add extra veggies, bean sprouts, bamboo, water chestnuts, etc. as available, but the sauce is right on and it's great with jasmine rice.

Awesome Slow Cooker Pot Roast

This is an awesome recipe! I always change it up a bit depending on what I have on hand (switch out water for red wine or more beef broth for example), but it's always amazing and I always have leftovers that I turn into beef stew for night #2: just take out and chop up the leftover beef and veggies, add another can of beef broth, and leave it on low for dinner the next day! It's awesome with some sourdough bread.

Slow Cooker Beef Stroganoff I

This recipe is on regular rotation in our house. Since it's just 2 of us, this is the perfect amount for dinner with leftovers for lunch the next day. I don't make all of the alterations that are suggested in the reviews, but usually I'll throw in some extra spices and herbs as I see fit (usually some minced garlic and a sprinkling of parsley and oregano). Sometimes I get 2 cans of golden mushroom soup, but sometimes I forget. If I do, it just makes the sauce stretch for more noodles, so may be a good idea to do for a family. This takes 10 min to throw in the crock pot before work and is amazing to have soon as we walk in the door and cook up a batch of egg noodles! Highly recommend- whether you feel like doing the alterations or not!

Skinny Seven Layer Dip

Excellent recipe. Whipped up real quick for Cinco de Mayo party. It makes a lot! (40 servings), so I recommend either halving the recipe, or plan on having leftovers for the next week.

Grilled Halibut Steaks

This was an excellent recipe for halibut on the grill! We made sure to put aluminum foil under the fish since we were nervous about the butter causing flare-ups. I'm only giving 4 stars instead of 5 because we ended up using about half of the butter sauce, even with adding more to the fish while it cooked. Very tasty and very moist. And for those reviewers that complain about their fish tasting "fishy", it's because the fish you bought wasn't fresh, not because of the recipe. We never by fish at the supermarket- always catch our own or go to a seafood market. When buying fish, always ask when and where it was caught. If they can't answer, don't buy it!

Tzatziki Sauce

Excellent sauce- tastes just like the restaurant version. Had it with shish tawook wraps for dinner. Drained the yogurt while I chopped up the cukes, and it wasn't runny at all. Also made sure to cut out the seeds. I just combined the ingredients in a bowl with a whisk instead of dirtying the food processor, and that worked well. Highly recommend!

Three Bean Soup

Super quick and easy meal- perfect for weeknights. Definitely add some spices- I threw in a bunch of minced garlic, cumin, cayenne, tumeric, and paprika in with the onions and pepper, and it was amazing! Makes quite a bit too- we'll have enough for a few days. And if you used vegetable broth instead of chicken broth, it'd be vegan.
