Flatlander Chili

I couldn't find tomato juice, so I used 24 ounces of tomato paste and used quite a bit of water, maybe 6 cups. Turned out pretty good. I thought it was ok, but my husband really liked it.

Chuck's Favorite Mac and Cheese

We loved it. I meant to add milk like someone suggested, but forgot. It was good without it, but would have made it a little creamier. We also added a little crushed red pepper and onion. GREAT recipe. I will definitely be making it again. Also the easiest baked mac and cheese I've ever made. Literally just combine everything and put it in the oven.

Fast and Easy Tofu Lo-Mein

My family liked this more than I did. I personally didn't think it was saucy enough to be called lo-mein, but it had a great flavor. I think I'd use double the sauce packets if Ramen didn't have so much salt. I used red pepper, mushrooms and broccoli, with a mixture of the frozen vegetables I bought.

Green Sauce Enchiladas

Karyn's Cream of Crab Soup

UNBELIEVABLY amazing. I added sauted shallots, onions and mushrooms. I also used a combination of fat free half and half and regular half and half, and it did not detract from the taste whatsoever. LIke everyone else, I used half the Old Bay that the recipe called for. Will definately be making this again and again.

Beezie's Black Bean Soup

Very good recipe! I followed advice and used two carrots, two pieces of celery, one cup lentils and half water/half stock. I also used canned black beans and rinsed them off insted of cooking them. It took about 3.5 hours on high to cook the lentils/carrots/celery, but turned out yummy yummy! I also used brown rice.

I halved this and it was just enough for 12 mushrooms. Also used way less butter. Was good, but next time I would use slightly less stuffing and cream cheese and more crab.

Spiced Sweet Roasted Red Pepper Hummus

A friend made this and shared the recipe with me b/c it was so fantastic! When I made it, it was spicier, so I'd recommend using less cayenne pepper unless you like spicy! I don't think I"ll ever buy hummus again.

Chicken Curry III

Fantastic!! I also used two cups coconut milk instead of regular milk. I left out the ginger. I sauted separately a yellow and orange pepper, onion, mushrooms, broccoli and tofu. I cooked the chicken beforehand. I used golden potatos. They needed about 30-35 minutes to cook in the sauce, then I added the chicken and veggies. My husband and I are huge curry fans and we both thought this was great.

Baked Spaghetti

I halved this recipe and there was still a ton. However, I still used 24 ounce jar of sauce b/c most baked pastas seem dry to me. I used a medium onion, a small green pepper, chopped up several mushrooms, and sauteed it with garlic before mixing with the meat. I also used 25 ounces of cottage cheese, b/c that's what it came in and it seemed stupid to leave 3 ounces out. I put sauce on the bottom of the pan like someone else did and left out the foil on the bottom. I also took advice and used sharp cheddar along with mozzarella b/c I did not want it to taste exactly like lasanga. This was pretty excellent. Husband LOVED it and kept raving.

Bada Bing Bada Banged Potatoes

Freaking excellent. I also divided everything by 4-5. It turned out tasting fine. I would leave it in the oven for slightly over 30 minutes so that all the potatos are crispy.

Curried Cumin Potatoes

I would rate these a 5. I didn't think any of the spices were too strong. I didn't think I would be a fan after I started smelling it, but they tasted great. They were dry, so I added coconut milk to the pan. Just enough tl continue cooking them. I think they'd be even better if they were put in the oven for 20 or so minutes to crisp up.

Slow-Cooker Chicken Tortilla Soup

Fantastic! I added black beans as well, and a bit of spinach only b/c it was about to go bad. I did not add any extra salt b/c the broth has salt. I added about 3 cups more water than it called for, so there would be more. GREAT RECIPE, easy and tastes great.

Basic Cream Cheese Frosting

Probably would be five stars, but I halved it, and I also don't have proper baking epuipment, so I had to slightly warm up the cream cheese and butter to be able to beat it by hand well enough. Still pretty great. I think next time I would cut down on the sugar by between half a cup and a fourt of a cup. It was a little too sugary.

Broccoli, Rice, Cheese, and Chicken Casserole

Nothing short of a disaster. I followed the recipe exactly. In fact, I was just putting it in the oven thinking it looked perfect when I realized I had not added any water. I added one and that made it REAL watery, so I decided to check on it to add the other. I kept checking and checking and the water never went down. I finally took it out and had to dump it in portions into a strainer, and soak it with paper towels. After, I put it back in the oven with more cheese until it melted. It tasted fantastic after that. Well, except for the onion- I'm an onion fanatic, and added a whole medium onion and it was too much. But besides those two things, this recipe is really good. Just leave out the water.

Thai Red Chicken Curry

Instead of the veggies called for, I used shrimp, potatos, tofu, onion and red pepper. I used QUITE a bit of red curry paste and it still wasn't very spicy, probably 3. The sauce was pink, not red. It didn't taste too different than the regular curry I made, but my husband says they're not supposed to. I'd never had red curry before. This was pretty good, but if you want it spicy, I'd add red pepper flakes to the sauce while cooking and add 4 tablespoons of red curry paste.

Herbed Garlic Mashed Potatoes

I think the secret to GREAT mashed potatos is three things in this recipe: olive oil, rosemary and thyme (and of course salt). Made otherwise plain potatos taste awesome!
