White Chili II

SUPER!! I used a regular onion as well and left out the ginger. Otherwise I followed it completely. Really Good! Both my husband and step-son loved it.

Macaroni and Cheese V

I would use another cup of milk and double the cheese. Two cups of cheese isn't much at all. This was very good, but a little dry, coming out of the oven. I also just covered the whole thing with breadcrumbs- more than the recipe called for. If you slice roma tomatoes up and put them on the outline of the pan, they are roasted and yummy with the mac and cheese when it comes out of the oven. Great recipe! Simple.

Oven Roasted Potatoes

I also added Rosemary and left out the dill weed b/c I didn't have any. Definitely put onions in there b/c they taste awesome. Be sure to put something down so tha tit doesn't stick to the pan. I had to cook this for about 45 minutes as well.

Awesome Baked Sea Scallops

Absolutely FANTASTIC! I don't think I used quite the amount of butter it called for , and I did not have nutmeg. We made pasta and it was perfect and saucy enough to go over it, with asparagus and mushrooms. We were loving life.

Crab Stuffed Chicken Breasts

SUPER! Added garlic when sauteeing mushrooms and onions and took advuce and added swiss and chopped bell pepper to the crab part. Fantastic meal.

Lobster Bisque

I followed one of the other posts and added half cup half and half, half a cup milk and a whole cup heavy cream. Also added in old bay seasoning and parsley and a bit of garlic salt. Turned out decent, but absolutely NOTHING to brag about.

Special Lobster Bisque

This rating may be due to my own inexperience in the kitchen, however, this tasted like flour to me. I added TONS of seasing to try to cover it up, but it has not worked. I will try again in time, making a roux.

Hearty Turkey Stew with Vegetables

SUPER!! I did not use flour, and used half broth, half water. Also added mushrooms, garlic salt, oregano and a bit of rosemary per other posts. GREAT TASTE!

African Chicken Stew

3.5 stars. I followed all the other advice: added carrots, celery, green onions, used chicken stock and halved the red pepper and black pepper. Used 3/4 cup pb. I still thought it was bland. So I added the rest of the spices and more cumin. It was still just ok. My picky step-son liked it, but I htink that is b/c it didn't have a distinct taste, unlike the curry's I've made lately that he doesn't like.

Brazilian Fish Stew

My husband and I both loved this. I used 2.5 peppers (red, yellow and orange), and served over brown rice with crusty bread. SUPER. I also went ahead and used two cans of 14 oz tomatos and lite coconut milk. Made it soupier. Ialso did not use tilapia b/c of past posts saying it was too flaky. I used founder and I would not reccommend it. Personally, I did not like the taste in the soup, but my husband did. I added tofu that I sauteed in olive oil in cubes. LOVED that in the soup. All in all, wonderful recipe.

Goat Cheese and Arugula over Penne

3.5 stars. I added mushrooms and asparagus. I bought sun dried tomatos to put on but did not like the way it tasted when I added, so only put a few. Sprinkled with parmesean before serving. All in all, it was good, but not great.

Asian Lettuce Wraps

More like three and a half stars. I made the sauce recommended by other readers. I did not have chili paste, so that could have been the problem. I did use half pork and half soy crumbles, with water chestnuts, onion and green onion. So minus the sauce, we pretty much just ate the meat in lettuce. Still good but not the point of this recipe.

Debdoozie's Blue Ribbon Chili

Probably 4.5 stars. VERY easy. I accidentally put garlic powder instead of salt, so I'm sure that screwed it up a bit. I added half a cup more paste, a little more salsa and chopped four small roma tomatos and added them, to make up for it. I also added oregano. SUPER good. Especially over pasta.

Herbed Garlic Mashed Potatoes

I think the secret to GREAT mashed potatos is three things in this recipe: olive oil, rosemary and thyme (and of course salt). Made otherwise plain potatos taste awesome!

Thai Red Chicken Curry

Instead of the veggies called for, I used shrimp, potatos, tofu, onion and red pepper. I used QUITE a bit of red curry paste and it still wasn't very spicy, probably 3. The sauce was pink, not red. It didn't taste too different than the regular curry I made, but my husband says they're not supposed to. I'd never had red curry before. This was pretty good, but if you want it spicy, I'd add red pepper flakes to the sauce while cooking and add 4 tablespoons of red curry paste.

Broccoli, Rice, Cheese, and Chicken Casserole

Nothing short of a disaster. I followed the recipe exactly. In fact, I was just putting it in the oven thinking it looked perfect when I realized I had not added any water. I added one and that made it REAL watery, so I decided to check on it to add the other. I kept checking and checking and the water never went down. I finally took it out and had to dump it in portions into a strainer, and soak it with paper towels. After, I put it back in the oven with more cheese until it melted. It tasted fantastic after that. Well, except for the onion- I'm an onion fanatic, and added a whole medium onion and it was too much. But besides those two things, this recipe is really good. Just leave out the water.

Basic Cream Cheese Frosting

Probably would be five stars, but I halved it, and I also don't have proper baking epuipment, so I had to slightly warm up the cream cheese and butter to be able to beat it by hand well enough. Still pretty great. I think next time I would cut down on the sugar by between half a cup and a fourt of a cup. It was a little too sugary.
