Pasta Pomodoro

We loved this. I like things saucy too, so cut the pasta down to 8 ounces, used 5 cloves of garlic, about 4 chopped roma tomatoes and a 10 ounce can of diced tomatoes. Yummy. We've tried recreating a recipe like this from one of our favorite restaurants and my husband said this is the best it's ever turned out. Must be the balsamic vinegar and chicken stock!

Mexican-Style Goulash

AWESOME! My husband and step-son gobbled this up, as did I and I am not a meat lover. Pretty much followed the recipe exact, except used slightly more macaroni than it called for. Great recipe. Will definitely go into our regular rotation.

Italian Pasta Salad I

My husband loved this, I did a little less so, but that may have to do with pregnancy nausea. I added black olives, a bit of chicken (for the husband) and chopped avocado. The avocado really did it for me.

Classic Waffles

DO NOT under any circumstances add salt to this. It was so salty it was inedible. I had to add a bunch of other stuff to make up for it. I did add cinnamon like others said. I liked it but my husband thought it was too much. Overall, these weren't good until you put butter and syrup on them at all.

Stuffed Shells III

I stuffed half with skim ricotta and half with low fat cottage. Both were great. I also only used half a pound low moisture mozzarella and 4 ounces parmesean, like others suggested. My husband loved it. I added a bit of sauteed spinach to some. Would definitely make again.

Black Bean and Couscous Salad

Definitely use more than one cup couscous. One is not nearly enough; it turns out like bean and corn salad with a bit of couscous. I used quinoa instead and it was super. My husband and I felt the lime taste was a little much, but overall, it was a good, healthy dinner.

Creamy Pesto Shrimp

I followed suggestions and did this: 1/4 cup fake butter, 1 cup fat free half and half, 1 cup half and half, and the rest is the same. I also made my own pesto sauce. Honestly, there was something really lacking. If you want a mmm mmm good outcome to this, I suggest using real butter at least. It was good- anything with pesto is!- but just not grrreat.

Goat Cheese Arugula Pizza - No Red Sauce!

I agree- way too much goat cheese. I think 4 ounces would be enough. I couldn't find seasoned, so it was just regular goat cheese. Upon other readers suggestions, I did toss the arugala with lemon juice, evoo and a little salt and pepper. I also added some sliced black olives. Pretty good but nothing totally amazing. It is a nice change from regular pizza though and a great use for pesto.

Cottage Cheese Chicken Enchiladas

I'm rating this a five for two reasons: it's great and it's the easiest enchilada recipe I've ever made! Used low fat sour cream and cottage cheese. I would suggest shelling out for high quality tortillas. The corn ones I used fell apart very easily. I ended up keeping them flat and covering them with another tortilla. Worked pretty well.

Judy's Strawberry Pretzel Salad

SOooooo good! Used no fat cream cheese and whipped topping, and fake butter. I found that the gelatin was too much for the pie pan and it spilled over and was quite messy. But it was worth it!:) Great recipe.

Indian Chicken Curry II

Pretty good. I left out the ginger root and somehow forgot the lemon juice. It was a bit too creamy so we added about a cup of water. I wonder if the lemon juice would have helped. Overall pretty good. I also used garam marsala instead of cayenne pepper and used potatoes, tofu and peas instead of chicken.

Linda's Lasagna

Here is the deal: I've eaten a TON of people's lasanga recipes and this is by far the best. I must admit, this is my first time making one, but this one takes the cake, and I'm not really sure what makes it stand out from every other lasanga. Even better than store bought. I used 12 ounces ricotta, but also mixed in about 4 ounces of cottage cheese that I had leftover from another recipe. So it was probably extra cheesy. I also used half mozzerlla and half monterey/colby jack cheese. AMAZING!! Sprinkle parsley on top before serving.

Baked Potato Soup V

Super. I did make a few changes. I took the advice of others and used skim milk. I used low fat sour cream and only 4 large potatos. I also added a large onion, which I sauteed in the butter. We still thought it was too thick, so I added about a cup of chicken stock, which was an ingredient I saw in the restaurant-quality baked potato soup. I also stole a couple other things from that recipe and added 1/2 teaspoon dried basil and 1/8 tsp thyme. This is creamy, cheese and amazing.

Linguine with White Clam Sauce II

Husband said this was restaurant quality. Only thing I did differently was to add a handfull of chopped mushrooms, an onion, and a tablespoon of butter to the olive oil. Great.

Gourmet Mushroom Risotto

I also used half of the mushrooms the recipe called for. I followed one users advice and prepared myself to stand stirirng for about 40 minutes. I also found that I needed more broth than the recipe called for, but I did add slightly more rice than it called for. We added asparagus and pees. Loved it but thinkit still could have cooked a litlte longer, so as not el dente, but totally creamy, bc that's how I think risotto should be.
