Ham and Broccoli Bake

Don't use chicken instead of ham. I've made this twice; the ham adds salt that is needed. With chicken this was bland. With ham, this was great!

Chocolate Trifle

Outstanding!! I took the advice of others and used the chocolate chunk brownies, the french vanilla cool whip. I also used the whipping cream mixed with the whipped topping. So good!

Swanson® Roasted Tomato and Barley Soup

Wonderful!! Put a little more barley than it called for a about two cups of water added as I went. It took way longer than 25 minutes for the veggies and barley to become tender, so it needed the water. Otherwise great, we loved it!

Chicken Parmigiana

So easy and good! We think putting about half a cup of parmesan in with the bread crumbs may be good and will try that next time. We also used one 24ounce jar of spaghetti sauce and it was fine. Just saucy enough, put over pasta.

The Best Thai Coconut Soup

I combined this with the Thai Curry Soup recipe on here by adding some Pad Thai noodles and a bit of spinach. My husband thought it was good but he likes things spicy, so I added more red curry paste (cooking it by adding a bit more onion then adding it to the soup) and about a tablespoon of curry powder. Super! Served over white rice (if you have the noodles, white rice not needed, but it tasted great over the rice).

Pesto Chicken Penne Casserole

I thought this was gross. The cheese needs to be cooked longer, and I love spinach, but the frozen spinach just tasted weird in this.

Spaghetti Squash with Pine Nuts, Sage, and Romano

I don't want to skew the ratings, I'm pretty sure I cooked the squash wrong. I would have appreciated direction on how to seed it- I just took out the seeds and I am pretty sure I should have taken out the membrane too? It was too wet when done. I tried to dry it out in the oven and microwave with no success. Anywho, I ended up using regular spaghetti with the same ingredients and it was very good.

Spanish-Style Chicken Stew

I have to admit, I had doubts that carrots, red onions and chickpeas would work together. I used only 1.5 red onions because they were big, and used broth instead of water (I ended up adding a little more than 2 cups). I left out the chicken and used about 10 ounces of sausage. Fantastic. We thought the chickpeas were a little hard, but we're looking forward to the leftovers to see if they soften overnight.

Low Carb Cauliflower Leek Soup

I had my doubts about this one, but it turned out delicious! I didn't see the comments about using less broth beforehand and I would use about a cup and a half or so less next time. DO NOT ADD the cream- it is NOT needed! I made half for my vegan family members without and it was fantastic, then added some cream to the second half, and it wasn't as good. I also added a can of white beans for extra heartiness, I recommend that as well!

30-Minute Minestrone

Husband loved this. I left out the cabbage but did everything else the same. Be careful not to overdo it on the pasta because then it turns into a pasta soup...although that did help fill the boys up.

Feta Cheese Foldovers

I personally didn't think there was enough cheese in each bite, all I tasted was the bread. But I am rating it a 4 star bc this is just my preference, and my husband said there wasn't room for more cheese, as he made this one. I added onions and olives and a little red pepper as well and used the garlic and herb feta.
