Zucchini Brownies

These brownies were wonderful! Took them to the office and a lot of my co-workers wanted the recipe. One little change I made was to use 1/2 cup Splenda and 1 c. sugar. I used heaping cups of shredded zucchini too. You can satisfy your sweet tooth with this version of a healthier brownie. Thanks for sharing this recipe.

Apple-Berry Pie

This pie is absolutely delicious! I took this pie to the office and it disappeared quickly with compliments. I used fresh blackberries that were frozen and Granny apples. Thanks for sharing this recipe.

Oatmeal Banana Raisin Coconut Cookies

Wonderful recipe, great combination of bananas, raisins, oatmeal and coconut. Didn't change a thing in the recipe. I just mashed my bananas instead of cutting into pieces. This is definitely a keeper.

Creamy Peanut Butter Fudge

This is absolutely the best peanut butter fudge EVER. I've already made 3 batches this year and everyone who has tasted it thinks it's the GREATEST. It's a "keeper" and will become a holiday tradition. I wanted to add that I even used 2% evaporated milk and reduced fat Jif peanut butter in making this fudge. Thanks so much for sharing.

Award Winning Soft Chocolate Chip Cookies

This is a wonderful cookie recipe. My daughter made them to take to her workplace and they disappeared quickly! Everyone thought they were great. A big hit!! My daughter even substituted one cup of the chocolate pieces for one cup of M&M's. The combination worked well.

Chocolate Strawberry Smoothie

This smoothie is absolutely DELICIOUS! Since I really got on a "smoothie kick" this year, I decided to fix different ones for my parents while we were visiting. This recipe was definitely a favorite with everyone. Even my husband, who would never try any of the different smoothies I fixed, decided to try this one and he even liked it. Have made it several times. I used lowfat vanilla yogurt instead of plain. Thanks for sharing.

Orange Glorious II

This recipe is a family favorite. The colder the ingredients are, the better. I used 1% milk and 1/3 cup sugar, have also substituted 4 T fructose for the sugar. Instead of 12 ice cubes I use 10. Turns out frothy, cold and refreshing.

Southern Sweet Potato Bread with Pecans

This is a delicious bread! I made a few changes that worked well. Used 1/2 cup wheat flour for part of the flour measure; 1/2 Splenda and 1/2 c. sugar; egg beaters for the eggs and walnuts instead of pecans. Since I cooked several sweet potatoes in the fall I measured out 1 cup servings and froze to enjoy this bread any time of the year. Remember using Splenda will cut down the baking time somewhat.

Macadamia Nut Cookies

These cookies are WONDERFUL. Since the Macadamia Nuts had some salt I even used unsalted butter and they were great. Even shared some with co-workers, and then they were asking for the recipe. Thanks for sharing!
