Mexican Bean and Rice Salad

For the healthiness of it, I wouid give this recipe a 5, but the flavor was a 3, so I gave it 4 stars. I did add 2 tbspn EVOO and about the same of balsamic vinegar. Definately could use some more herbs. We had it with chicken and veggie kabobs and it was a very healthy gluten free meal. :)

Extreme Chocolate Cake

THis cake was AMAZING!. I didn't have a full 3/4 cup of cocoa so added 1 oz of semisweet choc and also used 1/4 butter and 1/4 oil. The rest I did exactly as written. Make it in a bundt pan. It is soooo moist. I did not make the suggested frosting...just make a glaze of my own concoction. Definatley will make this again.

Gluten-Free Irish Soda Bread

I used 1 cup ground oatmeal, 1/2c. rice flour, 1/4 tapioca flour, and 1/4 cup finely ground flax seed for the flours. I used no sugar, but instead used 1 tablesppon real maple syrup, 1 tblspn. honey, and 2 tablespoons milk whey. I also added 1 teaspoon cardomen and a handful of raisens. This turned out so nice. Baked for about 35 minutes. Nice brown color, great texture and gently flavored.

Winter Squash Rolls

These were amazing. I baked a butternut squash and used 1 and 1/2 cups. I substituted organic butter for the shortening, decreased the salt by half, made 15 rolls and a medium sized bread braid. Brushed with butter for last 5 minutes. Very hearty bread.

Applesauce Oatie Cookies

I made a few changes. Cut out the white sugar and used 1/4 cup honey. Used organic butter. Decreased salt to 1/2 teaspoon. Added 1/4 cup ground flax seed to flour mixture. Added 1/2 grated apple and decreased applesauce to 1/2 cup. Added 1 teaspoon Double Strength Vanilla. Baked at 350 for about 10 minutes. Stored overnight in air tight container and they were even better the second day. My boyfriend really liked them and he is a sugar hound, so this was a big change. I will make these again.
