Fresh Southern Peach Cobbler

This was very, very good even though I didn't use peaches. I thought I had some in the freezer - nope - only cherries. Used approx. 5 cups cherries and tapioca instead of cornstarch. Cooked on stove top first instead of the oven (I didn't think 10 min. in the oven would thaw the cherries)and then added the batter. Baked for 25 min and covered with foil for the last 10 min. Didn't use the sugar topping. It was plenty sweet. I will make again with peaches and probably try apples or combinations of fruit too. Thanks for the recipe aeposey!

Burrito Pie

Made this minus the green chiles. Used medium salsa instead of taco sauce (that is what was in the fridge)and that was plenty of heat for me. I split the recipe and froze half of it. Probably used a little bit more cheese between two casseroles than the 9 ounces. Simple to make, filling and quite tasty. Thank you for the recipe

Chicken with Chipotle

This was a quick recipe to put together. I used chicken breasts (that is what I had on hand). I browned them in a frying pan then put them in a casserole dish. Mixed the sauce ingredients in the same fry pan (added one more chipotle pepper and 2 minced garlic cloves)simmered for a few minutes then poured it on the chicken breasts and baked for 30 min. Served with rice pilaf. Husband went crazy for it.

Barley Bake

This was very good. I rinsed the barley first - sometimes the processing misses stuff. Substituted celery for mushrooms (that is what I had on hand). Easy and delicious. Thank you Katinhat.

Overnight Blueberry French Toast

My son made this for Mother's Day breakfast. What a treat! He used 1 package of cream cheese and 8 eggs (that's all we had). I think two packages of cream cheese would have been overkill. The blueberry sauce was very good but next time I think we should use half of the sugar. He also added lemon rind and 1 Tbsp of lemon juice to the sauce which helped cut the sweetness. Will make it again with the changes. Anytime someone cooks for me it makes me smile. :)

Chicken and Biscuit Casserole

This was very good. Used E-Z biscuits recipe from this site for topping instead of baking mix biscuits. Husband gave it 5 stars and our picky eater cleaned his plate!!

Easy Pavlova

Spicy Chipotle Turkey Burgers

Sunday Morning Lemon Poppy Seed Pancakes

These turned out wonderful. I make pancakes most Saturday mornings for the family. Doubled the recipe (except for the salt) and used all of the lemon rind from one large lemon (1 1/2 T). Thanks for the delicious recipe.
