Mindy's Macaroni Salad

Very good salad! I had a hankering for mac salad on Memorial Day(something about patriotic holidays, I guess!) and this satisfied it quite nicely. I gave it 4 stars because I had to change 2 small things: reduced the amount of sugar and substituted some chopped green olives for the pimento since I didn't have any on hand. There seemed to be a lot of dressing but the pasta really soaked it up. It also met approval with my husband and 8 yr. old. Will make again!

Juicy Roasted Chicken

Yum! I had to substitute butter because I didn't have margarine but otherwise, I followed the recipe. Prepared this way, the chicken really does turn out juicy and flavorful with a minimum of fuss. I served it with Glazed Dijon Carrots (from Allrecipes), rolls and buttered egg noodles with snipped fresh basil for a delicious dinner. This recipe is definitely a keeper!

Apricot Chicken with Balsamic Vinegar

We love this! I made it for supper this evening with rice and steamed broccoli. My husband had seconds. As one reviewer mentioned, it's a wonderful blend of sweet and savory. While it simmers, you can prep quick side dishes so everything is ready at the same time. Great weeknight entree. This is definitely a keeper for us. Thanks for sharing!

Basil Chicken over Angel Hair

I made this for supper tonight as I had all the ingredients on hand, including fresh basil. I made the recipe exactly as written and sprinkled each dish with freshly grated Parmesan. My husband and 8 yr. old daughter enjoyed it, in fact, my daughter declared it "delicious" and had seconds. I liked it but was surprised at the lack of basil flavor. I wonder if a touch of pesto would kick it up a notch. I will make this again though, because we'll have plenty of tomatoes from our bushes soon and I love pasta dishes featuring fresh ingredients.

Seafood Pasta Salad

This is refreshing and delicious, just how seafood salad should taste. It goes together quickly, with minimal effort and makes a great lunch or light supper. Perfect for those warm days when you don't want to fuss in the kitchen. Here in FL, that's more often than not!

Mom's Zucchini Bread

Delicious and moist! I did make a few changes, although it's not entirely fair to rate recipes after having altered them drastically. I substituted applesauce for all of the oil (standard procedure for me-I never miss the oil), cut the sugar back by roughly 1/4 cup and omitted the nuts. I'll use this recipe anytime we want zucchini bread. Love that it makes 2 loaves-one to keep, one to share. Thanks!

Creamy Twice-Baked Potatoes

I served these alongside the Baked Chicken Nuggets from this site and they were very well received. With only 3 people in our family, I need ways to use up a 10 lb. bag of potatoes! This recipe fits the bill. It's not hard to make and the filling has a nice, creamy texture with great flavor. My husband especially loved them. We will be making these again! Thanks for the recipe.

Baked Chicken Nuggets

Great chicken recipe! I followed it exactly with the exception of placing the nuggets on a wire rack and spraying them with Pam before baking. They turned out moist with good flavor. My husband and 8 yr. old loved them. I served the chicken alongside Creamy Twice Baked Potatoes from this site and green beans, for a delicious meal. Glad to add this to my collection.

Zucchini Coconut Loaf

I made this for the first time last night and it turned out beautifully, very moist and flavorful. I did omit the nuts and substituted applesauce for the oil. I would never have thought to add coconut to zucchini bread but it works! This is a keeper.

Fluffy White Frosting

Absolutely perfect! I had a craving for Wacky Cake and was tired of my usual powdered sugar icing so I tried this instead. I wasn't sure if the cream of tartar in my cupboard was still good but it worked. As other reviewers have said, this recipe makes plenty of light, fluffy, glossy, easy to spread frosting with a nice marshmallow flavor. With an egg white frosting, the key is to have a clean bowl and beaters without a speck of yolk. I don't yet own a stand mixer so I spent several minutes on it with my hand mixer but the results were worth it. My 8 year old daughter helped with it too. Why bother with store bought icing when you can make your own so easily? I can see lots of variations with this basic recipe too, as others have mentioned, with different extracts and using food color to tint. Fun!

Tiramisu Layer Cake

First of all, I love Tiramisu so I thought the flavors of this cake were very good and it gave me a reason to use the white cake mix I happened to have. I found it easy to make and assemble. However, it wasn't worth the expense involved. Between the whipping cream, mascarpone cheese, Kahlua and semisweet chocolate, it's an expensive undertaking. I did follow the recipe exactly. I made it for an office going away party and while my coffee loving coworkers seemed to enjoy it, there were no rave reviews. This is a dessert that is tasty and presents nicely but I could have purchased a real Tiramisu at the grocery store for much less. I don't know that I'd make this again.

Italian Wedding Soup I

Delicious! I've always loved Italian Wedding soup but never made it. I'm so glad I finally did! It was a breeze to make and my little girl loved it. The meatballs turned out beautifully in taste and consistency. We love soup so I plan to add this recipe to my permanent file. Thanks Star, for sharing!

Light and Fluffy Spinach Quiche

Yummy! We had this for supper tonight. I used regular mayo and cheese since that's what I had and I made my own crust. Followed instructions exactly. Hubby and 6 yr. old daughter loved it. Wonderful flavor, bakes up perfectly to a nice, golden brown. I've made quiches before but none were so tasty. I will definitely make this again. Thanks for sharing! Note: I've also made this sans crust since I'm the only one who likes crust in our family and it turns out just fine that way too.

Braided Easter Egg Bread

Sorry Holly, but this was disappointing. I don't know what went wrong since I followed the instructions to the letter, except for baking time which had to be shortened at the suggestion of other reviewers, and I have made yeast breads in the past. I had to add extra flour just to knead the dough because it was a sticky mess. It didn't seem to rise properly and I used fresh yeast, covered it with a damp towel and kept it in a warm place. While it was baking, one of the eggshells popped! I haven't eaten the bread but so far, I'm upset with the results. I hope it tastes better than it looks.

Pope's Valentine Cookies

Wonderful cookies! The dough has a nice texture, no refrigeration is needed and it rolls out beautifully. My daughter and I made heart cookies using this recipe. We love shortbread cookies and these turned out quite nicely, dressed up with a little icing and edible pink glitter. We'll be making these again!

Magic Mango Bread

Fabulous! This bread is moist, sweet, and addictive. It doesn't have tremendous mango flavor but it's still awesome. Even my 5 year old tried some and loved it, which surprised me. Made a couple of changes: replaced the oil with applesauce and used pecans because I was out of walnuts. The loaves didn't rise a lot but they turned out of the pans easily. Next time I may reduce the sugar a bit. Definitely a keeper to have on hand when mangoes are in season!

Italian Anisette Cookies

Easy, delicious, just what I was looking for. Perfect anise flavor in a not-too-sweet cookie. My 4 yr. old daughter helped me decorate them. I used 1 tbsp. baking powder. My grandmother makes something similar to this at Easter and now I think I've found the recipe we will use for our Easter cookies!

Brunch on the Bayou

Excellent! Made this for my Sunday School class and it disappeared quickly. This dish was easy to prepare the night before and baked up beautifully in the morning. The cheese didn't brown on top but I think it may have to be broiled for that to happen. I can't rate it as far as kid pleasing but the adults seemed to love it and I was asked for the recipe.

Butter Flaky Pie Crust

I had high hopes for this crust, based on the reviews, but it was disappointing. It could be me, though. I added 1 tablespoon of sugar and used the food processor to cut in the butter. The dough formed well, rolled out nicely and went into the pie plate fairly easily. I made lemon meringue pie so I baked the crust first. It shrank terribly,didn't hold the shape of the crimped edge at all and was tough and chewy. Perhaps I overmixed but I thought I was being careful. I may try again but I've seriously considered giving up on homemade crust.
