Broccoli Chicken Casserole II

I made a few changes. I used Fat Free Cream of Chicken, Low Fat mayo, and fat free cheese. The recipe was good but pretty salty. Next time I will use reduced sodium cream of chicken instead and just use two cans. Will also add an onion next time.

Triple Threat Fruit Smoothie

This is my favorite smoothie recipe! I remove the seeds from the kiwi to make it a little less seedy and use whatever yogurt I have handy.

Pizza Casserole

This recipe is so simple to adapt to your tastes. I use rotini pasta, ground beef, italian sausage, garlic, green bell pepper, green olives, pepperoni, and lots of cheese...just the way I love my pizza

Easy Marinated Vegetables

I only used broccoli and cauliflower and marinated 4 hours. It was ok but nothing special. For lunch the next day I added a little mozerella and grilled chicken and it gave it more flavor.

Slow Cooker Salisbury Steak

It was ok. It was lacking something to make it great. I used healthy choice soups for less sodium but you couldn't tell. There was still plenty of salt.

World's Best Lasagna

This is a good recipe but I did make some changes. I omitted all the salt. I also didn't add water to the sauce. Since I am only cooking for two when it came time to assemble I used mini loaf pans to make individual lasagnas. I cut the lasagna noodles in half and they fit in the loaf pan perfectly. I cooked two for that night and froze 6 more. Then I froze the remaining sauce to use with spaghetti.

Bob's Awesome Lasagna

This lasagna is very simple to make. I did make a few changes. I added 1 lb of sausage and browned the meat onion and sauce mixture for about an hour. I switched ricotta for the cottege cheese just because I don't like how cottage cheese looks. I know that is silly but I doubt it makes a difference.

Sausage Stuffed Jalapenos

These take a little effort to put together. If I had a melon baller it would have been a lot easier to scoop out the insides. They are worth it though, they taste awesome.

Fried Okra

I used frozen okra and let it thaw about halfway before cooking. Skipped the salt and pepper and used Tony's creol mix instead. I used my deep fryer and didn't have a problem with the coating falling off. I think if you let the okra cook for a few minutes before stirring it will have a better chance of sticking.

Shrimp Scampi Bake

I followed the recipe exactly and served over linguine. My boyfriend liked the shrimp alot but I just thought it was ok. It was coated with butter but didn't absorb any flavor. I am going to read through the reviews and see if anyone has a solution. If I can find one I will try again otherwise I will move on to the next recipe.

Cheesecake Topped Brownies

These are really good. I used fudge brownie mix and skipped the icing. I tried one right after they cooled and didn't care for it although my boyfriend loved them. The cheesecake layer was the problem. The texture was to slimey. I put them in the fridge overnight and the next day they were perfect. The cheesecake mixture had hardened and I am in love.
