Spicy Orange Chicken

Excellent. Made as, served with coconut rice. Cooked w a timer at each step. Used all the marinade. The red pepper flakes made it spicy so if you don't like spice use 1/2 or none. But we loved it.

Classic Meatloaf

My mom made great meatloaf. Never the same each time. Mine was hit or miss. This recipe is perfect. Perfect consistancy, never crumbles and reheats well. Make your own tweaks for flavor but delicious as is. I add fresh parsley to the veg blended in my food processor.

Halibut Supreme

Fabulous! Used 1/3 light mayo, 1/3 wasabi mayo and 1/3 grekk yoghurt, half parm half cheddar. Seasoned the halibut w dill and made everything exactly as written. It was delish!

Seven Layer Salad

I love this salad. I use 1 c mayo/ 1 c LF sour cream and sometimes a little nf greek yogurt. I am not a huge fan of cauliflower and hate peas but they are a must in this salad. The peas and cauliflower add a crunch. This is a "cannot stop eating" salad. I make it for bible study every time our group serves and it is ALWAYS gone. For those who are "fat" conscious there are ways to cut the fat. Turkey bacon, lite/nf sour cream or light mayo (although I made it 1 time w lite mayo and did not like the dressing)lite cheese/nf cheese...but if you make these changes and don't like the salad do not low rate it!!!

Marty's Thai Chicken Satay

Used brown sugar for Muscovado. Made the marinade exactly. Doubled the sauce ingredients and quadrupled the peanut butter and omitted the peanuts. Used 20 oz of lite cocount milk. Marinated chicken for 12 hours just because made it the night before. I have NEVER had such tender chicken...the chicken breast were organic. It was like a Filet Mignon that melts in your mouth. YUM! Hope you try this recipe!

Coconut Poke Cake

This was amazing and this is how I tweaked it. I added a package of coconut pudding (not instant because there wasn't any) and 1/2 tsp of coconut extract to white cake mix and made according to directions. Some of the reviews said this cake did not have a strong coconut flavor...well this worked perfectly. I used 8 x 8 square pans. While still hot I poked holes about an inch apart with a straw. Using the cream of coconut and 1/3 can condensed sweetened milk I SLOWLY poured it all of it over the cakes and let them cool. I roasted about 1/2 cup pecans, chopped them and drained a small can of crushed pineapple mixing together. I whipped fresh heavy cream with no sugar (since many of the reviews said the cake was sweet) and used about 1/3 whipped cream folding it into the pineapple and pecans and used that in between the layers. I spread the rest of the whipped cream on the cake and coated w the toasted coconut. The cake was not too sweet or soggy. It was total perfection and delicious. I cook a lot but I don't bake often and this was off the charts delicious. Reading the other reviews helped immensely. Good luck...very easy, very delectable a real winner!

Roasted Red Potato Salad

Amazing. Those of you that said it is oily, try using very little while roasting. I have found it best to cut the potatos, place in large bowl, salt pepper and 1 tbsp of olive oil and toss until coated. Even tho it doesn't look like it will coat all it will. I used med red potato and dbl the onion, celery and used 1/2 lp turkey bacon. Mixed 1/2 cup mayo with 1/2 cup NF Greek yoghurt. Sprinkled dill and a little garlic jalapeno mustard. Everyone loved it.
