Italian Peas

I made this recipe for Christmas dinner to satisfy my daughter's request for peas "like Aunt Liz used to make." Well, I have no idea how Aunt Liz made them but this was a huge hit. I was really surprised at how flavorful this dish is (I wasn't expecting great things). It was so easy and a big payoff for so little effort. I'll be making this regularly.

Pistachio Fluff Fruit Salad

This fruit salad sounded like it would be amazing due to the rave reviews. When I made it, it was very very sweet, and just not very good. We left out the bananas, but decided to add pecans for crunchy-ness and 1/2 cup sour cream to lessen the sweet.This improved it. The marshmallows didn't really add to the salad, either. If you like sweet things, this is probably more for you. Maybe the bananas we left out are the secret ingredient that makes the dish. Overall a lot of tinkering had to be done and it's still somewhat lacking.

Gravy Baked Pork Chops

Very tasty! Easy! A hit basically. I've been looking for a good pork chop recipe and this is a keeper. I'm not a big pork chop fan so wanted a good recipe other than the standard grilled version (which I like). I browned the chops in olive oil and butter then following other reviewers' lead, sauteed a chopped onion and diced garlic (4 cloves) in pan drippings. Added soup and about 1/2 cup water rather than milk. The gravy was excellent. Will be making this again.

Stuffed Pepper Soup I

One word: YUM!!!!! What a fantastic combination of flavors. Will be making this many times during the cool months ahead. The only changes I made based on what I had on hand were 1 red and 1 yellow bell pepper, added some diced onion to use it up and used about 1/2 cup or so ketchup (I thought I had tomato sauce but didn't). Omitted the brown sugar since ketchup is sweet already. Also, based on comments about thickness I added about 3 or so cups of water. Turned out a great soup consistency and delicious!

Easy Tuna Casserole

Fantastic base recipe!! I've been looking for a "remember when" tuna noodle casserole recipe and THIS is it. Made it tonight with some personal tweaks and will definitely add this recipe to the rotation. The fried onions are the key. Thank you!

Golden Oven Omelet

I made this today for lunch and it was fabulous! Aside from quiche, had not baked eggs before so I was intrigued to see how it would turn out. I halved the recipe (as is) and poured it over a sauteed mixture of onions, orange bell pepper, and tomatoes sprinkled with swiss cheese. May not really be fair since I added all that...but what a great base recipe to customize to your hearts' desire. Will make again and again and probably will not use the same "additions" twice! Thanks for a very tasty recipe!

Pork Chops in Red Sauce

5 stars for amazing, delicious flavor, 4 stars for a super easy, quick dish to put together, 3 stars in the tenderness department (but maybe that's because I used 1 inch thick tenderloins?). I will definitely make this again! Thoroughly enjoyed this dish.

Ginger Glazed Mahi Mahi

I loved the flavors of the marinade but thought it was a bit powerful for the mahi mahi. Next time I'll use low sodium soy sauce to cut back on the saltiness and also pair it with wild salmon which has a much more robust flavor that I think would taste fantastic with this sauce. Thanks for the recipe, will make it again.

Sweet Mustard Chicken Bake

I made this last week with very high hopes. Had the sauce not been so sweet, I would probably have given it 4 stars because the chicken itself was very tasty (smelled wonderful while baking), but just wasn't crazy about the sauce. I even used equal parts honey & dijon as many reviews suggested. I do love the simplicity of this recipe and the fact that these are typically "on hand" ingredients. If I make it again, I'll cut the honey even further....more like 1 part honey to 2 parts dijon.

Pesto Cheesy Chicken Rolls

UN-BE-LIEVABLE GOOD!!! Made this for dinner last night and am still amazed at how tasty it was! And **super easy** too if you skip all the pounding and rolling...LOL!! I did as others suggested: seasoned the chicken breasts, placed them in the greased (Pam) baking dish, then simply spread the pesto over them and topped with thick (1/4 inch) mozzarella slices. Just divine!! My 9 year old loved it as well. This is definitely going to be regular at our house from now on. Thanks so much for an awesome recipe!

Chicken Creole with Chile Cream Sauce

This was fantastic & so easy! I threw it all in the crock pot and went to work. It cooked for 8 hours and was absolutely delicious. My 9 year old critic/daughter really liked it too...she agrees that it's a "keeper." I seasoned the chicken with the Creole seasoning, placed it in the bottom of the crock pot. Then mixed all remaining ingredients except sour cream together and poured over the chicken. When I got home tonight, I mixed in the sour cream to heat while the rice cooked. Very tasty all the way around. Will be making this again! Thanks for a super easy and tasty recipe!!
