Mexican Shrimp Cocktail

Fabulous! I didn't use ketchup. I added following ,I added very fine chopped lg cucumber,1/2c green onion and 1/2 c walla walla sweet onion ( instead of red onion ) and 1 c celery finley chopped along with three fresh chopped tomatoes. I added Franks hot sauce to taste. Chill for at least 1 hour. Serve with fresh Lime slice on a small dollop of sour cream YUM!

Asian Asparagus Salad with Pecans

This is a fabulous dish to take to picnics or any summer gathering, actually anytime of year it is Great and easy easy! ( I use splenda,low sodium soy and roast the pecans)

Oven Kalua Pork

This Easy Moist and Flavorfull pork took me back to my memories of Maui and the food! I prepared this for my son's wedding (60) people it was simple and was the hit of the reception! We made a mango pinapple chutney to serve on the side Yum..

Oysters Broiled in Roquefort Butter

Fabulous! I changed this a little ; I used small muffin pan instead of half shells , then I added fresh chopped garlic and dob of butter in each tin. Put the oysters in the muffin tin and topped with chopped fresh spinach then , layered the blue cheese dressing and topped it all with shredded parmesean then baked for ten minutes then broiled till golden brown and edges curled and they were Great!
