Amazing Muffin Cups

We thought this was pretty yummy. Unfortunately, we had to omit the bell pepper and chives (not on hand). So we added some chili powder to give it more of a kick. Also, we had to cut it down quite a bit, since it's only the 2 of us, but we each ate 2 muffins. We normally go exactly by the recipe the first time we make an item, but we couldn't wait to taste it this morning. Next time, we will use the recipe exactly, and I'm sure it will get 5 stars from us again!

Hot Tamale Pie

While we adjusted the recipe from 8 servings to 4, this was fantastic! Unfortunately, we had no poblano peppers on hand, so we had to use the sweeter bulls-horn peppers and add cayenne for the heat. We made it 3 days ago, and already I'm craving more!

Garlic Cheddar Chicken

Didn't have chicken breasts, so I used chicken thighs (boneless, skinless). Also had to use garlic powder instead of fresh (also out of it). I omitted the salt and added onion powder. Also, due to a lack of Parm, I added some grated Asiago cheese. Turned out wonderfully tender and crispy. very flavorful. Hubby loves it, too.

Fabulous Wet Burritos

I'm feeling very proud of myself. My hubby is the chef in our family, and I'm very hesitant about trying new things (I don't mind eating new things, but preparing them??? LOL). We both loved it.

Thousand Island Dressing II

We have been wanting reuben sandwiches all weekend, but we kept forgetting to buy thousand island dressing. So, after work today, we tried this recipe. VERY GOOD. After the first taste test, we added a bit of Worcestershire Sauce. It tasted just like our local delicatessen!

Artichoke Dip

I have been making a version of this recipe for years, and it's always a hit. I use the entire can of Kraft Parmesan cheese, and I have yet to try it with the chilis. I'll try them at our next party.

BREAKSTONE'S Creamy Layered Enchilada Bake

This was delicious! I had to adjust the recipe a bit. I was low on salsa, so I added green enchilada sauce to fill it out. I also had no black beans on hand, only 5 tortillas and 3/4 cup sour cream. Despite all that, this was a huge hit at home tonight! We'll definitely have it again.

Light and Fluffy Spinach Quiche

Wonderful! My hubby almost balked at the mayonnaise, but I assured him it would be an asset. The crust was a bit moist (my fault... didn't get the spinach dry enough), and we sliced the onion, rather than chop. Next time, we'll add some sliced mushrooms and garlic.

Egg Sandwich

My Nana used to make this for me back in the 60's. Since she scrambled eggs the old-fashioned way (on the stove, in a cast iron skillet), she put a slice of Velveeta in the eggs to melt. She also put my sandwich on a small hamburger bun, instead of toast. Topped with ketchup, it was a great meal for a 10-year-old!

Slow Cooker Oatmeal

Well, it WAS creamy. My husband frequently has to be at work at 6 am, after I've had to work until 10pm the night before, so we liked the idea of using the crock pot. Although after reading so many problems concerning the crock pots, we decided you all were using pots that are too large. We cooked ours in a 1-1/2 qt. crock pot, following the recipe. We weren't happy with the texture. Maybe next time, we'll use a little less water overnight, then add a little more cream in the morning. We really like the idea of it so we're not going to give up on it.
