Guacamole

Yummy! Very, very easy. The only change I made was using flat leaf parsley instead of cilantro (none on hand). My husband loved this as did I!!!. First time making and will make again and again. Thanks Bob for sharing.

Banana Oatmeal Cookie

This is a wonderful way to use over ripe bananas. A nice change from banana bread. Very, very easy to make. I use half brown and half white sugar (baking spelnda), and whole wheat flour. I find they bake in 10 minutes. They taste wonderful. No need for any icing! The whole family loves!!

Ricotta Cheese Pancakes

First I read the reviews. I decided to double the recipe and I added vanilla & cinnamon for more flavor. Then I added milk because the batter was way too thick. To be honest, the texture was good, but they really lacked flavor. I don't think I'll make these again...Sorry!

Slow Cooker Honey Garlic Chicken

This was terrific. My husband and I both loved it! I did not have fresh ginger, so I used ground ginger (it's not my favorite flavor, next time I won't use it at all). I also don't see the need to brown the chicken first. I served it over cooked rice. Once again, a very easy, tasty meal ... Thanks for sharing!

Strawberry Fig Preserves

This was an easy, wonderful recipe. I used peach jello the first time and it was very tasty. I didn't bother with any boiling of the jars....I just put the preserves in "tupperware" and gave out to my family members and kept the rest in the fridge. My husband loved it! I made again with strawberry jello and we liked it just as much! I did use splenda instead of sugar...so I used a little less because of the extra sweetness of splenda. Thanks so much for sharing.

Green Tomato Cake

This was wonderful! I made a few changes based on other reviews. I used my blender to chop the tomatoes (almost puree), used 2 cups instead of 4 cups, salted, drained and then rinsed and drained again (about 15 min.) I used all applesauce (no butter) and cut the sugar by 1/2 cup. I used just a dash of nutmeg, and 1 tsp. vanilla. I added pecans & raisins (because I love them!) It took only 30 min. @350. It does not need any frosting.....moist & very tasty. My husband loved it! Thanks Glenda for a fabulous, easy to make recipe.
