Italian Summer Squash Polenta Bake

I've made this many times and just love it. Having a dairy allergy, I omit the cheese, but it's still delicious and full of flavor. I also use fresh garlic instead of the salt.

Lambless Shepherd's Pie

This recipe was absolutely delicious! I made it tonight for dinner, and my husband had two servings. Very tasty. I did substitute soy meat for the kasha and bulgar, and added a little rosemary, but other than that the flavor was wonderful and I will definitely make this again!

Easy One Skillet Stroganoff

This was absolutely delicious! I just made it last week, and I'm making it again tonight...yum! I did substitute real garlic for the powder, and I think this time around I'll cook the noodles seperately, but other than that, this recipe is definitely a keeper.

Vegetable and Tofu Burger

I too was disappointed by this. The mixture didn't form a "burger" at all, and I ended up with more of a scramble. Also, I think it may taste better if the veggies are sauteed first, as leaving them raw makes the "burger" rather crunchy.

Spinach and Mushroom Pinwheels

I just made these for my husband's surprise party this past weekend and they were a hit! Everyone loved them, and there was a comment made that they were a nice alternative to the ones stuffed with tons of meat and cheese. The only change I made was to add real garlic rather than garlic powder for that extra punch. I'm definately making these for Christmas. :)

Sweet and Sour Pork I

My husband and I found this recipe to be very tasty, and I would definately make it again. I think next time though I will cut back on the amount of salt used in coating mixture. Also, since I was unable to find Tapioca starch, I just used regular flour which worked fine.
