Southern Pimento Cheese

This is a very flavorful recipe. Perfect for a cheese spread or a cheese ball. Just roll in pecans. For great pimento cheese, I suggest doubling the mayo and cutting the cream cheese in half. Perfect!

Italian Peas

These were very tasty. A nice change from the canned peas That I normally make. I microwaved the peas first as to soften them a bit. They still turned out a little firm for our tastes. Next time would just microwave them longer. Easy and tasty. Will likely make is one again.

Bri's Buffalo Chicken Meatballs

I had not seen a recipe for Buffalo Chicken Meatballs before, so decided to give it a try. I followed the recipe exactly. This was my first time working with ground chicken, was quite sticky. My meatballs were a little flat on the bottom but no big deal. The recipe tells you to line the pan with foil. Do NOT skip this part. I had a good quality non stick pan and there was black goo all over it. I think this is from the French fried onions, caramelizing. Next time, I would be sure to line the pan. Ok, now for the meatballs themselves. They were very moist and did not fall apart. I am not sure about the cilantro. I like it but not sure that it worked well in this recipe. I would either cut the amount in half or leave it out all together. I believe minced celery or celery salt instead of garlic salt would be a nice addition. Also, was not a huge fan of the hot sauce mixed with the ranch dressing. I believe I would try mixing some hot sauce in with the meatballs and then dipping in blue cheese along with celery and carrot sticks. I would try this again with the mentioned changes. I do think this is a good base recipe that you can adjust to your own tastes. Thanks for the idea!

Mama's Balsamic Vinaigrette

Not a fan. Not much flavor other than the Balsamic Vinegar. Will let it sit overnight to see if the flavors peak. If not, will try to add some other ingredients as to not be a total waste.

Super-Delicious Zuppa Toscana

I did not change much to the recipe. I normally will try to cut fat in recipes if it is saturated, such as meat and dairy. I used a hot Italian Turkey Sausage instead of pork and used fat free half and half instead of heavy cream. Everything else was the same. I liked the flavor, but found it really thin. We prefer creamier soups. First, I added grated Parmesan cheese in hopes of thickening it up. I ended up adding a can of cream of chicken soup. This worked and gave it a nice creamy base. I have a feeling this may be one of those dishes that taste even better the next day. If I made this again, I would try adding less chicken broth and more half and half.

Blue Bacon Stuffed Mushrooms

This is a really good recipe and super easy! I did not change much. I used microwave bacon because I do not like cooking bacon and dealing with all of the splattering of grease on the stove. I simply crisped it in the microwave and then crumbled it. I sautéed the onion, garlic and mushroom stems with 1T of butter and 1T of canola oil. I kept the recipe the same, other than that. I did add black pepper. I also, as others, did not blend it. I really liked the end texture this way. I was worried about the consistency of the filling, thought it might run all over the place, but it did not and was perfect. I thought the taste of bacon was just enough but was surprised that I did not taste more of the blue cheese. I may add more blue cheese next time, as I am a big fan of it. Overall, this is a fantastic recipe on its own and you can customize it with different seasonings. I will be making this one again, many times. Thanks!

Baked Omelet

This is a fantastic basic dish that can be changed up to fit your mood or on hand ingredients. I followed the recipe with a few changes. I substituted half the eggs for eggbeaters. Added half a sauteed onion and fresh chives. The family really liked it. I loved the ease and only one pan clean up. Served with a side salad for a perfect light meal. Will make this again and again changing things up a little bit. Will try it next with Swiss and sauteed mushrooms.

Baked Asparagus with Balsamic Butter Sauce

Really liked the sauce, very easy and the soy sauce gave it an Asian flair. The asparagus should be cooked longer in my opinion. Maybe it was the asparagus, but very stalky. Will try it again as it was super simple. Will cook a litttle longer next time.

Garlic Spaghetti

We really did not care for this dish. I admit I changed it up, so not really fair. Rather than a side dish, I decided to make it a main dish and added chicken breast. I also added spinach. Seems like both of these ingredients would have worked well. What I ended up with was incredibly bland for our taste. Had to add lots of salt and pepper. I also had to add some butter, which helped. I even added a spoonful of basil pesto for some extra flavor. I started to not even serve this to my family. It seemed to get better after a few bites and we ate it, at least my husband and I did. My 20 year old son, said sorry mom, but no thanks. What to do with all the leftovers; I hate wasting food. In all fairness, I will try this again exactly as written and serve as a side dish. I will review again after that.

Sour Cream Chicken Quiche

This recipe was easy and tasty. I omitted the crust as with most quiche recipes. Other than that, I followed the recipe. I found the consistency a little off, a little mushy. Maybe, I could have cooked a bit longer but the outer edges were quite brown. Really an OK recipe but not sure I would make again and not anything I would serve to company.
