Lemon-Basil Quinoa Salad

What a wonderful blend of flavours. Let me just say that I've made this twice now and both times it's come out wonderfully. It's a very pretty looking dish and would be very festive looking on any table. I've never had roasted peppers before and just thoroughly enjoyed them. Thank you for the introduction to them. I'll be using them in other dishes now. Thank you Manella.

Scottish Dundee Cake

I used milk to mix with the eggs. Had a bit of candied pineapple, maybe a half cup and added that. Everything else was as written. Baked up nicely and looks very attractive on the serving platter. This is indeed a comfort food. I wanted to try it out first to see what it's like. I will be making one for Easter. Thank you Don. This will be a winner at Christmas as well!

Johnnycake Muffins

I just made this recipe and it's exactly is Cheerios says, very light. This is a very very tasty muffin to have with a cup of tea or coffee. I enjoyed mine last night with a salad for dinner. For variety I would like to try using a citrus glaze on the top one once they cool. Thank you Cheerios.

Braised Corned Beef Brisket

I followed your recipe exactly. I was very concerned because it was very tough going in. The kitchen smells amazing while it cooks. When it was done, I could've cut with a spoon! It tastes amazing and I will do this again. I wished I would've tried this sooner. I served it with a potato casserole.Thank you Mauigirl. This is a keeper.

Stuffed Meatloaf

I made this recipe as directed with no changes. I put it together in the morning, refrigerated it all day. When it was time I covered it with more cheese. This was delicious. Thank you Semigourmet. This is going to be a regular here. Today I'm making two to send up on the bus to the work camps up north for a friend of mine. All they will have to do is put them in the oven. Thanks again!

CHOCOLATE CHIP OATMEAL COCONUT COOKIES

This is a very hearty cookie. I made the dough and put it in the fridge while I cleaned up the kitchen. I added a bit more coconut and they came out really well. They baked up in 10 minutes for me and are nice and soft. These can be a drop cookie or rolled into balls. If you like chocolate and coconut, then this is the cookie for you. I may try using butterscotch chips next time. The recipe is very easy. Thank you Manella!

PASTA FROLLA(Italian shortcrust cookies)

This recipe came together quickly and easily. I think I must've used a smaller cookie cutter because I got over 55. I especially liked the subtle lemon flavour. This will be a very nice addition to the trays at Christmas and thanksgiving, but I think Easter will be the best with a lemon yellow icing. Thank you very much Manella.

Cranberry and Cilantro Quinoa Salad

I will be making this again. The only changes I made was to use the juice of two limes and I used 1 teaspoon of curry and a half a teaspoon of cumin. This is a delightful salad with a taste combination that wakes up your taste buds. It looks lovely on a bed of spinach. Thank you Alison.

Barley and Mushrooms with Beans

Five star! This is truly comfort food. I used a whole box of chicken broth because I added extra vegetables. I added a handful of chopped Brussels sprouts, broccoli, a few stalks of asparagus, a whole pkg of mushrooms, and I had to use chic pease because I didn't have any white beans. I will make this again. Thank you.

Toffee Brickle Cookies

These mixed up quick and tasted great. I've been asked to make a fourth batch. So they must be good. A good reason to keep cake mixes in the cupboard for when there are unexpected guests. I've done a couple of variations using different flavours of mixes and add ins. They work well too. Thank you for this recipe.

Perfect Roasted Potatoes with Garlic and Onion

This will be made on a regular basis now. Everyone just loved it. I especially liked the crispy parts. The idea,of salting this after is good on a couple of levels. It not only works but it allows each person to season theirs to taste instead of eating it the way the cook prefers it. I also loved the comments that the kitchen smells delicious. I used a bulb of garlic and next time I will add another, but I love garlic. This can easily go with pork, chicken, beef or fish. I think it's great as a stand alone though with some shredded cheese on a bed of fresh spinach. Thank you very much for the recipe.

Cranberry Orange Loaf

This mixes up easily and quickly. I used pistachios in this recipe as I didn't have any walnuts left. Rather than making it into a loaf, I made it into muffins. This turned out well. Next time I am doubling the recipe. This is very tasty. The muffins look very pretty on the plate and everyone enjoyed them. It's very festive looking for the holidays. Thank you very much for sharing this.

Icebox Cherry Almond Shortbread

This is a keeper! I will be making this a few times for Christmas. It was easy to make as well. I didn't have the required amount of almonds it was just under that. So I just increased the cherries and it worked well. I added a half teaspoon of Almond extract which made the whole kitchen smell terrific. I drizzled white chocolate over top and it made the bars look very delicate. The recipe made 16 large bars for me. Those could be easily cut in half to give you 32 cookies though. It's really nice to get a tried and true recipe like this. I wouldn't change a thing. A big thank you to westcoastmom and of course her Grandmother!

West Coast Trail Cookies

I didn't have any flax, so I just left out. Used pumpkins seeds and sunflower seeds instead. The recipe makes a lot of cookies so I sent some with a friend who gets bussed into work each day. They don't have breakfast so these were a welcome sight for their first meeting of the day to go with their coffee. I will be making these on a regular basis now. Especially during the cooler season because they are a great energy cookie. Thank you. You made a lot of people happy.

Anzac Biscuits

I've made this recipe a few times now and I love it. The batter is a bit loose so be sure to press each cookie down slightly just to even it out. I've used chocolate chips or butterscotch chips and they're both great. It works with raisins or cranberries and even dried cherries.

Beaker's Vegetable Barley Soup

This soup came together quickly with the ingredients I already had in my pantry. I found it to be a very substantial soup. It will be great for fall and winter when I need something to warm me on a cold night. I used vegetable broth, an extra carrot and two zuchinnis because I like a thick soup. I may use some extra onion next time. The seasonings work great in this. Thank you for a wonderful recipe.

Cherry Snowball Cookies

This is such an easy recipe. For me it made a lot of cookies. I followed the reicpe exactly except I used pecans. Only problem is they didn't last. I sent them to a friend's workplace in a carton as I doubled the recipe and they were eaten before the end of coffee break with requests for more. Next time I will try the walnuts. Thank you Sarah

Carrot Oatmeal Muffins

I wanted a muffin with substance and this was it. I had everything in the pantry to make these. The recipe was well written with easy to follow instructions and the ingredients are amazing. I made two batches. I took some to a neighbor and as I was walking by the mailman asked what the great smell was in the basket, so I gave him one too. These are a definite keeper. They don't leave you wanting more and you can feel good about eating these because they're so healthy. So a big thank you goes out to you westcoastmom from me, my neighbour and the mailman.
