Tofu and Veggies in Peanut Sauce

Delicious meal! Made a mix of garlic powder, corn starch, and a bit of salt to coat the tofu (make sure you press out the water) and fried the tofu in peanut oil for about 8 minutes before adding it in with the rest of the veggies and peanut sauce. I used honey instead of molasses, and the sauce was delicious. Served with coconut rice.

Southwestern Casserole

I made this for the first time, and it was good but not great. It needs a lot more spice, so I added tons of homemade taco seasoning and cayenne pepper. I used only one can of fire-roasted tomatoes because we aren't huge tomato fans in our house. What made this dish really taste great was serving it with Franks Hot Sauce and Sour Cream. Yum!
