Irish Chicken and Dumplings
This is my second time making this dish. I made some modifications based on my first (failed) attempt and some comments from previous reviews. First, I didn't have celery, since I live in Turkey and it's hard to find here, but I didn't miss it a bit. We don't have Bisquick here either, but dumpling dough is so simple to make. Second, I used chicken legs and thighs, which were cheaper and more flavorful than boneless skinless chicken breasts. They are quite easy to de-bone after cooking for that long. Third, I left out the potatoes this time around; last time I found them bulky and flavorless, and there were so many of them there wasn't room for the dumplings! Finally, I added two chicken boullion cubes and left out the pre-made soup. I didn't have poultry seasoning either, so to spice up the dish, I added 1 tbsp of dried rosemary, 2 bay leaves, 1/2 tsp of cumin, and 2 cloves of garlic. With these modifications, it was the best chicken and dumplings I've ever eaten (not to brag ;)).

Asian Mushroom Soup
I made this with twice as much chicken and udon noodles and it turned out fine, although I needed to add extra water to keep the right proportions. I used 1 8-oz. package of regular mushrooms, half a package of frozen spinach, about one carrot and a bunch of green onions to make the amount suggested, although these could have been doubled as well. In addition to the fact that all the measurements were in cups, which I found a bit confusing, the directions could be clearer - one needs to cook both the chicken and the noodles first to make it work with the cooking time allotted (and not get salmonella). ;)
