Mexican Bean Salad
Best bean salad! I always make this a day ahead so the flavors are brighter. I like to double the kidney beans and black beans, I use two packets of Stevia instead of sugar, an orange bell pepper instead of a green bell pepper and I add chopped avocado just before serving. I've served this both as a dip with tortilla chips and as a side dish. Everyone always raves about it!
