Apple Pie

Reviewed: May 2, 2011
Wow! My fiance and I loved this pie! The first words out of his mouth were, "this may be the best apple pie I've ever had." I followed the recipe exactly, except for dotting the filling with butter (which I just plain forgot to do!) We both thought the flavor and texture were just right. A lot of people have stated this pie came out runny, but I baked it in the morning and served it after dinner and it was perfect. I think you just need to make sure it has totally cooled before serving. I will definitely be making this again!

Fast and Friendly Meatballs

Reviewed: Mar. 20, 2011
These just came out of the oven and they are delicious! But I'm only giving them 4 stars because I made so many changes to the recipe. I added 2 tbsp parmesan cheese, 1/4 tsp sage, 1/2 tsp garlic powder, 1/2 tsp onion powder and salt and pepper to taste. I can't wait to see how they reheat later with some marinara and whole wheat spaghetti.

Bev's Orange Chicken

Reviewed: Mar. 19, 2011
I think my fiance and I might be the only one's who weren't wowed by this recipe but to us there was something "off" about it. On the chicken, the sauce was pretty good, but when we poured it over our rice and broccoli, it just didn't taste right at all. I think the onion soup mix really overpowered the other flavors in the sauce, even when I added more orange than the recipe called for. My fiance and I both agreed that this was just okay, but probably not something we'll make again.

One Dish Chicken Bake

Reviewed: Jan. 18, 2011
This is a great recipe but the chicken needs a little more seasoning for it to really be great. I added some s&p, thyme, paprika, and garlic powder and that seemed to be a nice combo. Also, I'm not sure you NEED to add the 1/3c. milk... ours came out just slightly runny and probably would have been fine without it. Probably a matter of personal preference. Lastly, took the advice of some others and sprinkled some sharp cheddar cheese on top the last few minutes of baking. But the chicken came out moist and delicious, and I will definitely make this again!

Easy Meatloaf

Reviewed: Jan. 15, 2011
This was my first attempt at making meatloaf ever and this one turned out very moist and flavorful with a few minor changes... Took the advice to 1)Saute the onion in butter with some garlic before adding to the mixture and 2)Add 1 tbsp worcestershire sauce for flavor. 3)My fiance really hates mustard & won't eat anything with it, so I made the sauce just from brown sugar and ketchup and it turned out great! I accidentally used 2lbs of ground beef instead of 1.5 but the overall taste and consistency was good... it came out moist but very "loose"... probably will cut back the amount of meat next time or at least add maybe 1/4 c. or more breadcrumbs to help fix the texture. Anyway, because of this, mine took slightly longer, about 1hr, 7 minutes. Just cook until the temp reads 160-165 or higher. :) Will definitely make this again!

Laura's Quick Slow Cooker Turkey Chili

Reviewed: Dec. 13, 2010
This recipe is my go-to chili recipe. I've made it probably 5 times now and only change a couple things here and there to suit mine and my fiance's preferences. I use 1 can of tomato soup/1 can diced tomatoes to make it a little chunkier & give it a slightly more fresh taste. I also skip 1 can of beans and just use 1 can black, 1 can white cannellini beans. I've also started adding 1 diced green pepper to give it a little color and some freshness. Otherwise, this recipe is delicious. The proportions of spices are perfect!

Peanut Butter Cup Cookies

Reviewed: Dec. 13, 2010
These are the best peanut butter cookies I've EVER had! I made the recipe exactly as stated and got just shy of 40 cookies. I don't have a mini muffin pan so I just rolled the dough into balls and made a more flat cookie on a regular baking sheet. Thanks to everyone who suggested freezing the pb cups first... I left mine in the freezer for about an hour before baking and they were perfect. Also, make sure, as others have said, that you put the cookies into the fridge to cool to stop the pb cups from melting all the way down. Mine just came out of the oven 10 minutes ago and I've already eaten 3 cookies! So delicious.

Shrimp Linguine

Reviewed: Dec. 6, 2010
This recipe was delicious!!! I stuck to the recipe as much as I could using the ingredients on hand. I substituted 1 c. 1% milk for the heavy whipping cream (and thickened the sauce with a couple tbs of flour), 2 tbs dried basil instead of 3 tbs fresh, and left out the parsley. I also added 1/2 tsp of red pepper flakes to give it a kick, although I wish I had either used a little less of that or just omitted the black pepper instead, as it was a tad spicy. The sauce turned out super creamy and delicious, not too thick but not too thin. We poured it over whole wheat thin spaghetti and steamed broccoli florets. My fiance and I both loved it and can't wait to make it again!

Light Chocolate Chip Cookies

Reviewed: Nov. 20, 2010
I used this recipe to make my first ever batch of homemade chocolate chip cookies (I usually buy the break n bake pre-mixed dough) and they turned out PERFECT. I followed the recipe exactly and got soft, chewy, golden cookies. Depending on your oven, you made need to put them in a little longer than the 8-10 minutes... mine needed closer to 12 minutes. Also, unless you make REALLY small cookies, I wouldn't say this makes 24.... probably closer to 18. Still, great recipe and I will definitely be using it again!
