Pear and Blue Cheese Salad

When I first read this recipe, I nearly passed on making the salad dressing because I wasn't sure about dressing made with maple syrup. Thankfully I tried it anyway, because by doing so I found what is my favorite salad recipe by a mile! This dressing is out of this world delicious! It does not taste like maple syrup on salad - it is just a wonderful blend of spicy and sweet. I made this salad for 3-4 parties during the Christmas season, and every time this salad was completely devoured and folks were asking me for the recipe. A permanent favorite for me.

Easy Pork Chop Casserole

This is a family favorite. I like to use Campbell's Golden Mushroom soup and the package of onion soup mix. Also, at the end of your cooking, you can top with some Durkee fried onions and put back in the oven for ~ 5 minutes to make a really pretty and flavorful topping. I always use the Hormel center cut pork chops and these come out perfect!

Zesty Zucchini and Squash

This is a really good & healthy recipe just as written. If you want to send it off the scale great and still be fairly healthy, try this: when the dish is completed, sprinkle some butter buds over the top, add a small amount of grated cheddar (2% lowers the calories), and sprinkle some italian seasoned bread crumbs over it all. It takes a small amount, so you aren't adding too many calories or fat. For about a 2 person sized helping, I added about a tablespoon each of cheese and bread crumbs - I estimate it added about a 100 calories. As low cal as this dish already is, you can afford it. Now it tastes like you are eating a decadent squash casserole :-) I could eat this every week!

Golden Yam Brownies

My husband summed this up correctly by saying these are one ingredient away from being great. They are wonderfully moist and sweet, but hate to say - kinda boring otherwise. I followed the recipe exactly as written. Perhaps some spices, or as another reviewer suggested, some raisins or another dried fruit. Also, just FYI - I had to cook mine longer than 30 minutes - I went 35, and they were still much more moist than you see in the picture shown. They lost their shape a bit when I put them on the serving platter and weren't as pretty as shown. Not sure that I will make these again.

Mulligatawny Soup I

Great soup - you should definitely double or triple the recipe. I recommend cutting the apple into fairly big chunks (about 3/4 inch). I didn't use 1/4 cup butter - just a ~ tbsp of olive oil is fine. Also, I don't see the need for the cream - this is great and so much healthier without it. I did try mine with some fat free half and half the first time, which is good, but you're fine if you don't put any in. I cannot get enough of this soup!

Cheater Pot Pie

Just fantastic, and so simple to make. I did use a deep dish pie crust for the bottom, but used Grand biscuits for the top (separated in half so they weren't too thick on top - they were just right). Used a rotissieri chicken, and put in chunky cooked fresh carrots, celery, onion, and peas (the peas were previously frozen). Used 2 cans healthy choice cream of chicken soup and skim milk. Garlic and poultry seasoning, salt and pepper. My whole gang loved it.

Javi's Really Real Mexican Ceviche

Loved this and it was a big hit at the bunco party I took it to. The shrimp cookedd within a couple of hours in the lime juice so it was fine. Next time, I will leave the cucumber in big chunks, just a personal preference, and I'm thinking of adding avocado chunks. The flavors though as is in this recipe are fantastic. Thanks to Javi for making me look good ;-)

Taco Pie

My girls (age 5 & 7) said this was the best ever and went back for seconds. My husband and I liked it alot too - this will go into regular rotation for us. I left off the sour cream, and I only put about a 3rd of a bag of crushed chips on top. I baked it in a 11x9 casserole dish. The only thing that keeps from from 5 stars on this is that it is really fattening (but then that's what makes things so good, right?)

Spinach Cheese Ball

Love this recipe, esp since you can shape the Christmas tree or wreath like other reviewers noted. I added green onions as well, and the Knorr vegetable soup mix packet. Thanks for sharing this one!!

Fluffy Pancakes

My kids and I loved this recipe. We added a tad more milk at another reviewer's suggestion as well as a touch of cinnamon extract. My husband didn't really care for these, but he doesn't like fluffy pancakes so we don't even try to keep him happy ;-)

Beautiful Salad

Very nice salad, and pretty presentation. I used raspberry vinigarette the first time, which was good but I'm not crazy about how sweet it was. I would recommend blue cheese crumbles and balsamic vinegarette dressing to go more 'tangy' than sweet. I'll be making this a bunch.

Beef Tenderloin with Horseradish-and-Roasted Garlic Crust

This is the best! I have always gotten great reviews when I serve this. The garlic / horseradish combination is awesome. The only thing I would say is to make a bit more so you can lay in on heavier on the tenderloin (if you are a garlic fan!)

Red Skinned Potato Salad

Based on taste, this recipe is 5 stars - but it is labor-intensive! I did the 1 cup mayo & 1 cup sour cream mix, and I also used green onions vs. a regular white one. Put in a little dill, celery salt and white pepper as well. The taste is really fantastic, and will likely be the only recipe I'll ever use in the future. Thanks for such a good recipe!

Orange Crunch Cake

Big hit here! The crunch layer in this cake really makes it special. My only recommendation is to make this in a 13 X 9 pan rather than 2 layer cakes. I probably rushed the cooling, but the top layer cracked so it wasn't as pretty as it should have been - but the taste is fantastic.

Pumpkin Chocolate Chip Cookies I

Sorry, I won't be making these again. These are more like a type of pumpkin bar (not really cookie texture) with some choc chips - what I was looking for was a choc chip cookie with background pumpkin flavor.

Rosemary Chicken

Fantastic! We'll be making this often going forward. I did add more oil, and I also added a little (~ 2 tbsp) balsamic vinegar. I mixed it all up in a baggie so I could cover it easily. I also sauteed the onions in advance. I'm sure this would even be better if it marinated a bit. Anyway, great recipe - you can't go wrong as long as you like rosemary.
