Easy Morning Glory Muffins

If you like carrot cake, you'll like these. It makes more like 18 regular sized muffins. I will try substituting apple sauce or pineapple for some of the oil the next time I make these.

Baked Macaroni and Cheese III

If you are looking for a creamy, cheesy macaroni and cheese, this is NOT it. This was very dry and too flavorless, even after adding more milk. I've tried many kinds of macaroni and cheese and this was my least favorite.

Pasta Con Broccoli

I just attended a cooking class taught by the owner of a local Italian restaurant who made this exact same dish - excellent! I used more tomato sauce and more parmesan to thicken the sauce like the chef did. (Add parmesan gradually to prevent clumping). He also used tubular pasta. I would like to find a way to make this lower in fat. Update: After making this several times, here are the changes I recommend: 1) double the recipe 2) add an entire small can of tomato sauce 3) add sliced red peppers - gives it a "restaurant style" appearance. 4) use penne pasta (tubes) 5) to make lower in fat, use half-and-half w/ a little cornstarch.

Layered Chicken and Black Bean Enchilada Casserole

I used fat free sour cream and medium enchilada sauce. I added onions to the meat and black olives. Next time I would add some mexican seasoning or salt to add flavor to the meat.

Easy Lasagna II

The easiest and best tasting lasagna I've made, including authentic Italian recipes that take twice as long. This takes 30 minutes to prepare, only because I add mushrooms and onions to the meat. I scale it down for a 9X9 pan. The amount of cottage cheese is too much - I used 12 oz. for a 9X9. I still used 2 eggs, 8 oz (2 cups) of mozzarella and used lasagna sheets. The sheets are slightly thinner than regular lasagna noodles and fit perfectly in a 9X9. Allow a full hour for baking. Although it looked soupy when I took it out of the oven, after 10 minutes it was fine. I used regular (not no bake)lasagna noodles and Ragu.

Best Chocolate Chip Cookies

These turned out good, very flat and not at all like the first photo looks. I thought these were a good, basic, flat cookie recipe. I tried to do the baking soda and hot water correctly, too since others had indicated that makes a difference in the puffiness, but it didn't. Suggestions?

Kabob Marinade

Very good - made with chicken and shrimp. We cooked in a pan on the grill and found that leaving some marinade with it during the first part of cooking helped keep the flavor. The whole family liked it - made it twice this week.

Coconut Cream Pie

I made this last night and it was wonderful! I used the Best Ever Pie Crust recipe (use a little more than half for one deep-dish crust), made real whipping cream for the top after it cooled, followed by toasted coconut which made it look professional. I cooked the pudding on a double boiler and got impatient for it to boil, so I put it in the microwave for a minute until it did. The filling was the perfect consistency - not runny, not too firm, just creamy. I have never made a coconut cream pie before and this recipe would be hard to beat.

Spinach and Goat Cheese Salad with Beetroot Vinaigrette

This is a wonderful salad. I'd never eaten beets until I made a similar beet dressing in a cooking class. It's surprisingly good. This is a perfect recipe for a dinner party - simple to prepare but it tastes like something you'd be served at a nice restaurant. I'd double the goat cheese - it's so good!

Authentic Enchiladas Verdes

This was good enough to make again. Mine turned out too salty - I think the broth is salty enough on it's own. Next time I make them, I'll roll them up and bake like the enchiladas I'm used to and add cottage cheese with the sauce over the top. The sauce is a little hotter than medium.

Black Bottom Cupcakes I

This recipe is a favorite I've had for years and is a permanent part of my collection - my sister and I make them at least once a year. We use regular sized chocolate chips. The filling is the best part and I wouldn't reduce the amount as a prior review suggested. I bake 20-25 min. and have a note on my recipe that they are better undercooked than overcooked. We like them both right out of the oven while the chips are still gooey and the next day when the chips have hardened. It only makes 18 for me. This recipe is exactly the same as "Grandma Gudgel's Black Bottom Cupcakes" and "Black Bottom Cupcakes II".

Stuffed Green Peppers II

Too much meat - 1/4 lb per pepper. I had to cook mine a lot longer to get the peppers past crunchy.
