Pineapple Upside-Down Cake II

This was yummy! I'll most likely make this again, but I'll cut down on the butter in the brown sugar/butter mixture. I used pineapple rings with maraschino cherried in the middle. My two little girls helped me make this and we cooked it in a heart shaped pan! Lots of fun!

Chicken Breast Cutlets with Artichokes and Capers

We really enjoyed the flavor of this dish! I let the sauce reduce too much, and was bummed about that, but that was my fault. I wanted enough sauce to pour a little over our angel hair pasta and that didn't happen. Next time I'll add another cup of broth before reducing to half. I'll also dice up the chicken, throw it into the sauce and toss with pasta or rice. Can't wait to make this again!

Cha Cha's White Chicken Chili

Great recipe! I made some minor changes, and it turned out superb! First off, I added some diced celery to the onion, and substituted some Tabasco for the cayenne ( I was out of cayenne). I used homemade chicken stock and added a can of low-fat cream of chicken soup while the mixture simmered. It toned down some of the spiciness, I thought. I only had 2 cans of beans, so that's what I used. Thanks for the recipe! It's a keeper!

Caesar Salad Supreme

Wonderful dressing. A++ I made this for a dinner party I had recently. I knew there would be a few pregnant women attending and they might have had concerns with raw egg in the dressing, so I used this recipe because it called for mayonnaise. It was wonderful and so easy to make. I'm so glad I made extra because I ate it for 2 days after and it was still good. I added just a smidge less anchovy because I didn't want to overpower some of the queasy guests, but next time I'll add at least what the recipe calls for. Overall, excellent recipe for company or anytime!

Pork Chops with Blue Cheese Gravy

These were just wonderful. We were on Atkins when I first made these and it is a perfect Atkins recipe. I substitued chicken for pork chops a few times. So decadent, I wanted to lick the pan clean!

Easy Morning Glory Muffins

Wonderful recipe. The whole family loved them. I used only 1 Cup of sugar and I substitued half of the oil w/ unsweetened applesauce. I didn't have any walnuts, so I left them out, but I'll put them in next time.

Amy's Barbecue Chicken Salad

I had been looking for a recipe to replicate the BBQ Chicken Salad at Mimi's Cafe (a great chain restaurant) and this was pretty close. I made it exactly as directed. Next time I'll add jicama, like Mimi's does. Thanks for the recipe, Amy!
