Lemon Carrots and Rutabaga

I have never eaten rutabaga before, but sometimes I get tired of our usual veggie lineup so I decided to give it a try. I'm so glad I did. The entire family enjoyed this dish. I don't like dill so I substituted tarragon for it. Delicous!

Ham and Cheese Crescent Roll-Ups

We make these a lot, usually as a late night snack, or instead of sandwiches for lunch. Sometimes the cheese doesn't stay in so well, so for a cheesier roll up, make a long roll by sealing all the edges into a single sheet, place ham and extra cheese along one side, roll up as a single log, seal the ends, and cut into pieces after baking. It usually needs an extra couple of minutes in the oven this way.

Chewy Sugar Cookies

Wow. It's Christmas Eve and I just made these with my kids. They were easy and delicious. We had a wonderful time together, too. I substituted softened butter for the margarine, and only used 2 sticks instead of 2 1/2 and that was plenty. We also added some sprinkles to the sugar we rolled them in, and they look beautiful. Mmmmm!!! My daughter says they are the yummiest cookies ever.

Zucchini Pie

This is my favorite recipe for a fast easy dinner. Our family of 4 (with 2 young kids) eats a whole pie for dinner without leftovers. I make this without the dill as I don't much like the taste of dill. A small onion or half onion is a nice addition, sauteed with the zucchini and garlic.

Roasted Tomatillo and Garlic Salsa

I'm not sure if it's fair of me to rate this because I changed it a little, but I feel I must because I loved what I ended up with so much! Basically I followed the recipe but instead of the 3 jalepenos I used 1 jalepeno and one poblano pepper, and cored and seeded both of them, to create a mild salsa. When roasting I put the pan on the middle rack and did not preheat, because I thought that would help the tomatillos have time to soften before burning. When one of them split open is when I removed them. I also added about 1/8th cup of chopped red onion to the blender. WOW! I was blown away by the delicious flavor!

Janet's Rich Banana Bread

I took this to a women's breakfast and got a ton of compliments from a group who usually don't say much about the food, so I guess they liked it. I thought it was very good as well. I made only one change, which was to substitute flavored yogurt for the sour cream since I didn't have any sour cream.

Smothered Beef Short Ribs

Wow. The flavor of these ribs and the gravy was sooo good! Even my picky 4 year old who cried when I made him taste them hummed merrily while he finished everything on his plate. I made the recipe exactly as directed but added additional carrots which I am glad of because of how delicious they were. I used boneless short ribs and trimmed off the fat as much as possible. Not something to help you lose weight, but I didn't think my gravy turned out too greasy. I'll make this again next time I buy short ribs.

Quinoa Chili

I LOVED this. I doubled the recipe so I could take dinner to a friend as well and it turned out to be a HUGE pot of food enough to feed both of our families dinner twice with more for a lunch as well! Because kids were going to be eating it I skipped the jalepeno and only added half the chili powder. It was not spicy at all, but it was still full of flavor! I did have to add some liquid, and I used a can of chicken broth (or half a can for a single recipe). I will definitely be making this again. EDIT: Now that I have made this a second time I will say that I believe that the flavor is much improved by cooking the quinoa in chicken broth (or vegetable broth if you prefer) instead of water. I think I did this without even thinking about it the first time because I almost always do when cooking grains. This time I didn't bother with it, and the flavor was not as good. I remedied it by dissolving some "Better than Bouillon" in a couple of tablespoons of water and stirring this into the finished chili.

Chicken Calvados

Amazingly delicious. We had this over steamed rice, and spinach with lemon juice on the side. I didn't change a thing except I did not take the time to go buy apple brandy. In its place I used half cooking sherry and half apple cider. The sauce, apples, and mushrooms with the rice was the best part, in my opinion.

Broiled Tilapia Parmesan

Fast, healthy, easy, delicious, and tilapia is not an expensive fish to buy especially if you buy it frozen and thaw in the fridge overnight. I couldn't ask for more.

Red Lentil Curry

This is so easy and delicious and absolutely an excellent bargain for dinner. I don't usually have curry paste around the house so I've just been adding a couple tablespoons of curry powder instead (we have a big bag of that because we love it). We've been eating this with cottage cheese and it is wonderful!

Southwest White Chicken Chili

This was decent, especially for a recipe calling for condensed soup. I give it four stars mostly because it was so easy to put together. If I were rating solely on flavor it would be a 3. I did not use all the chili powder it called for because my kids would not have eaten it, I only used about half a teaspoon to add flavor without spice, and I added some white pepper so it would not be bland. My husband and I added sriracha hot sauce at the table. I also substituted celery for the green pepper because that is what I had on hand.

Deviled Eggs

These were OK, but I felt they tasted too much like mustard. Also, they are missing something in comparison to how my grandmother makes them. I'm going to have to ask her for her recipe, or rather watch her do it, since I don't think she follows a recipe!

Slow Cooker Chicken Taco Soup

I didn't get this in until after lunch, so I cooked it on high for 4 1/2 hrs. instead of low for 7. I wasn't home in the middle to cut up the chicken but it wasn't needed. When I did get home at dinner time the chicken literally fell apart, I just pulled it apart with a couple of forks to shred it without even taking it out of the slow cooker. We ate it right away and it was excellent so I feel safe to say this doesn't need to be a two part recipe.

Savory Crescent Chicken

I cubed leftover cooked chicken thighs seasoned with salt and pepper, but because of the reviews stating this recipe was bland I also added 1 Tablespoon of curry powder and 1/2 teaspoon of tarragon to the cream cheese mixture before stirring the chicken in. Pretty tasty. The filling could be tweaked in any number of ways to make different flavors based on what you like. Easy and quick if you have leftover chicken.

PHILLY Make-Ahead Spinach Phyllo Roll-Ups

I felt like the ratio of filling to dough on this was a little off. By the time I used a third of the filling in three sheets it was SO full. If I did it again with the same amount of filling, I would make four rolls and/or increase the number of phyllo layers to give a better balance. Also, I used spray olive oil instead of butter because I thought it would be easier and healthier. It worked just fine...just hold the can way back to give a light coat. We actually ate this as a main course instead of an appetizer, alongside a lemon carrots and rutabaga recipe found on this site. The whole family enjoyed it, including the little ones.

Turkey Meatballs with Vegetable Sauce

We really loved this but I can't give it five stars because I don't think we would have liked it as it was written. I salted the meat, about a half to one teaspoon. I also added some pepper to the meat, and half of an onion, chopped very fine. I would consider at least the salt and pepper necessary. Additionally, because I didn't have vegetable soup I used a can of cream of chicken, and a can of milk, with vegetable "better than bouillon". Because the milk wasn't as thick as the soup I had to thicken the sauce with flour before serving. In the end, it was wonderful! I have to say though, that there is plenty of room for this to be yucky if you don't substitute with the right things, as some people have mentioned. Use discretion; if the soup you have doesn't seem like it would be good over noodles as a sauce, don't use it in this recipe. Also, I would suggest doing as I did and using milk and bouillon thickened with flour if you want to get away from the canned soup taste.
