Slow Cooker Coconut Curry Chicken

It was OK. Not really as much flavor as I would have liked. I'll try again with some modifications to see what I can do because it's not a bad base. I wish I could give it 3 1/2 stars.

Savory Crescent Chicken

I cubed leftover cooked chicken thighs seasoned with salt and pepper, but because of the reviews stating this recipe was bland I also added 1 Tablespoon of curry powder and 1/2 teaspoon of tarragon to the cream cheese mixture before stirring the chicken in. Pretty tasty. The filling could be tweaked in any number of ways to make different flavors based on what you like. Easy and quick if you have leftover chicken.

Scallops One - Two - Three

Well, they were enjoyable enough, but only because I LOVE scallops so much. The bacon and scallops do not cook at the same rate, so I ended up peeling off most of the bacon and leaving it on my plate because who wants to eat bacon fat that isn't crispy?

Pasta Bake

It's like making spaghetti but with one extra step at the end to make it extra delicious! Very easy for those days when my brain is tired so we can still have a delicious meal.

'Welcome Fall' Roasted Chicken and Butternut Squash

This recipe needs changes to come out good. The chicken was done before the potatoes. I had to set the chicken aside for 20 minutes while the veggies finished cooking. Also there was too much liquid. I loved the seasonings on the veggies but the chicken was plain. If I were to try again I might just cook the vegetable portion with less liquid and do chicken in a skillet with more seasoning.

Crabless Chicken Cakes

I needed to use up some leftover crock-pot chicken and this recipe fit the bill. The flavor and texture was indeed similar to the bready type of crab cakes, but without that actual crab yumminess.

Broiled Tilapia Parmesan

Fast, healthy, easy, delicious, and tilapia is not an expensive fish to buy especially if you buy it frozen and thaw in the fridge overnight. I couldn't ask for more.

Chewy Sugar Cookies

Wow. It's Christmas Eve and I just made these with my kids. They were easy and delicious. We had a wonderful time together, too. I substituted softened butter for the margarine, and only used 2 sticks instead of 2 1/2 and that was plenty. We also added some sprinkles to the sugar we rolled them in, and they look beautiful. Mmmmm!!! My daughter says they are the yummiest cookies ever.

Ham and Cheese Crescent Roll-Ups

We make these a lot, usually as a late night snack, or instead of sandwiches for lunch. Sometimes the cheese doesn't stay in so well, so for a cheesier roll up, make a long roll by sealing all the edges into a single sheet, place ham and extra cheese along one side, roll up as a single log, seal the ends, and cut into pieces after baking. It usually needs an extra couple of minutes in the oven this way.

Chicken Calvados

Amazingly delicious. We had this over steamed rice, and spinach with lemon juice on the side. I didn't change a thing except I did not take the time to go buy apple brandy. In its place I used half cooking sherry and half apple cider. The sauce, apples, and mushrooms with the rice was the best part, in my opinion.

PHILLY Make-Ahead Spinach Phyllo Roll-Ups

I felt like the ratio of filling to dough on this was a little off. By the time I used a third of the filling in three sheets it was SO full. If I did it again with the same amount of filling, I would make four rolls and/or increase the number of phyllo layers to give a better balance. Also, I used spray olive oil instead of butter because I thought it would be easier and healthier. It worked just fine...just hold the can way back to give a light coat. We actually ate this as a main course instead of an appetizer, alongside a lemon carrots and rutabaga recipe found on this site. The whole family enjoyed it, including the little ones.

Lemon Carrots and Rutabaga

I have never eaten rutabaga before, but sometimes I get tired of our usual veggie lineup so I decided to give it a try. I'm so glad I did. The entire family enjoyed this dish. I don't like dill so I substituted tarragon for it. Delicous!

Roasted Tomatillo and Garlic Salsa

I'm not sure if it's fair of me to rate this because I changed it a little, but I feel I must because I loved what I ended up with so much! Basically I followed the recipe but instead of the 3 jalepenos I used 1 jalepeno and one poblano pepper, and cored and seeded both of them, to create a mild salsa. When roasting I put the pan on the middle rack and did not preheat, because I thought that would help the tomatillos have time to soften before burning. When one of them split open is when I removed them. I also added about 1/8th cup of chopped red onion to the blender. WOW! I was blown away by the delicious flavor!

Deviled Eggs

These were OK, but I felt they tasted too much like mustard. Also, they are missing something in comparison to how my grandmother makes them. I'm going to have to ask her for her recipe, or rather watch her do it, since I don't think she follows a recipe!

Earthquake Cookies

I didn't think these were great. I would prefer to eat just cake, or else some other type of cookie. These were not moist and delicious as the cake mix would have been if cooked as directed, plus, the shortening makes it even less healthy.

Potato Chips

These were delicious. The only reason I give them four stars instead of five is because it takes a while to make a good amount of them (unless you're just making them for yourself). That's a lot of running the microwave to make enough for the whole family! They were delicious, though, and fun to eat for a special change. Thanks for the idea!
