Creamy and Crispy Scalloped Potatoes

These needed more salt and more flavor overall. Bland and milky-tasting. I probably won't make it again. (The only thing I changed was to add sharp cheddar cheese in the layers--wasted my cheese. . .)

Salsa Chicken

Not bad! I made it as written, and the chicken was moist. I might consider brining my chicken next time since not much of the taco flavoring actually soaked into the meat during baking. My chicken breasts were large though; perhaps thinner chicken breast would have absorbed more of the flavor. Will definitely try this one again though!

Caramels

Fabulous! It takes a L O N G time to get to 250 degrees. If you rush it, you will scorch it and ruin it. But if you just keep stirring for about an hour, and watch that thermometer, it will be awesome. Besides plain caramels, I also use this as a base for pecan turtles, roasting the pecan halves for about 7 minutes at 350, then dropping them in about half of the caramel and scooping out in heaping teaspoons, then coating in good chocolate after they solidify for a while. My husband says that it can't be beat!

Buffalo Chicken Wing Sauce

My fourteen-year-old thinks that this is the BEST Buffalo sauce ever--way better than the bottled grocery store stuff. We make it at least twice a month. Thanks, Chef John!

Coconut Date Balls

Love this recipe! My mom and I made these when I was a child. The only difference is that we always put about 1/2 c. of fresh chopped pecans. It helps to cut the sweetness a bit. Thanks for sharing!

Mini Cheesecakes

Simple to make and delicious! Make them a day ahead and refrigerate them overnight--it makes a difference. Warm cheesecake never seems sweet enough, but it really is just right when it is cold.

California Coleslaw

LOVED this slaw! I cut way back on the oil, then used EVOO and dash of sesame oil. Subbed Stevia for sugar and used sea salt for a healthful side dish since we're watching calories. Thanks for sharing your recipe!

Whole Egg Mayonnaise

WOW! Halved this recipe so I could make it with my Cuisinart blender stick. Put all ingredients into the jar (no drizzling that way), as suggested by a previous reviewer. I had perfect mayo in 30 seconds! I think I may buy egg beaters next time since my 12-year-old is skeptical of eating something with raw eggs in it. Still, easy and fabulous--thanks for a great recipe!

Smoky Chipotle Hummus

This is oh-my-stars good! I've made plenty of hummus before, but I think it is the dried tomatoes that give this particular hummus a different kick. I used smokey chipotle powder rather than the peppers in adobo because that's what I had on hand, but it was still excellent!

Pea Salad

Pecan Turtles® Bars

I followed the recipe precisely, and mine seemed greasy and grainy (like the brown sugar didn't ever completely dissolve). Probably not my best use of good butter. . . Maybe if I had cooked them longer than the recipe said, but I don't know.
