Mexican Wedding Cakes II

Love them! I give these out for Christmas every year. I under bake them slightly (8 minutes?) to give them a soft chewy texture. Soooo good! easy to over-indulge!

Tomato Chicken Parmesan

This was great! I did bake it instead of frying, to make it healthier. I added mozzarella and provolone cheese in the last 5-10 minutes, because I wanted gooey cheese, not burnt. I have picky kids, and they LOVED this! This recipe will definitely be going into dinner rotation.

Chef John's Sausage & Shrimp Jambalaya

I love love LOVE this recipe!! I have made this at least 5 times now. I have a no salt Cajun seasoning that I use along with low sodium chicken broth. The first time I made it, it was too salty. And the brown rice is best, I love the nutty flavor it gives and I love the texture. I used white rice in a pinch once, and I didn't care for it. Oh, and once everything is in the pot, bring to a boil before simmering. Otherwise you are looking more at 1-2 hours of cook time... Update: This base works great too when you have other meats you need to use up. My favorite is using leftovers after baking a ham. Very good recipe, and can be modified in a myriad of ways and still taste great!

Mom's Simple Dumplings

Very good. I use this as my go-to recipe for dumplings. I do however, add an egg to help keep them together. Otherwise they tend to dissolve away in my chicken and dumplings.

Turkey Brine

I had a turkey in my deep freeze, it had been there for quite awhile. I found this recipe hoping it would moisten the bird back up. (longer you have a bird in a deep freeze, more likely it is to dry out from being in there for a couple of years) Not only did it bring moisture back into the bird, but it was the most juicy, tasty bird we had ever had! It made the best gravy too! This is a keeper. I will never cook another turkey without the brine ever again!

This is the real deal!! I made this with lamb stew. I originally had a box mix that I made. I had a funny feeling I should make another, just in case. So glad I did. The box mix was, quite frankly, . It tasted awful. This is so easy anyway, its a waste of money to buy a mix for flour, baking soda, salt and sugar... This was delicious. Tasted just like what my grandmother used to make, and she was Irish through and through. Only changes I made were to reduce bake time to 30 minutes and brush butter on the top at the last 5 minutes.

Peach Pie

I followed everyone's suggestions and it was super runny still. That may have been partly my fault though. I used very ripe orchard peaches that were soooo juicy that we had peach juice running down our elbows just cutting them. We haven't tried it yet and will update my review once we do. We made it late last night and I fell asleep while it was cooling down in the oven. I woke up this morning and my husband said he took it out of the oven while it was still hot and steamy and covered it with foil to cool on the counter overnight. I ran to the pie to take the foil off but i was too late, the crust was no longer crisp and flaky. It had steamed in the foil and the crust is now soft and gooey. Sigh, I will have to try this again sometime in the morning where I don't have husband errors. Lol

Squash Pie

This was really good! It was super watery at first, but just like what others had said, it did cook up just fine! I doubled the spices like others suggested, I'm glad I did. I also used my stick blender to give it a more smooth consistency after mashing. My kids loved this, they thought it was pumpkin pie! I know if I would have said squash pie, they would have just turned up their noses at it & refused to try... And sure enough, this made 2 pies. I'm glad I had 2 crusts ready!

Mom's Zucchini Bread

Good recipe. My husband says its even better than his grandmother's. I added 4 cups of zucchini based on other's reviews. The bake time was off, however. It took more like 80-90 minutes.

No-Mayonnaise Ranch Dressing

I didn't care for this. Neither did my daughter who loves ranch. It was bland and was missing something BIG. It tasted a lot like watered down sour cream with a bit of spice. I followed others advice afterwards to try to doctor it up. Still wasn't good.

it didn't make NEARLY a gallon of cider. far less, like maybe 4 cups. And it was a little to sweet for my liking. I think i will stick to orchard cider.
