Creamy Chipotle Chicken

This is delicious! I'll usually double the recipe (everything except the cream cheese) and use the leftovers to make enchiladas the next day. We also like things hot, so I add the whole can of peppers and adobo sauce. If you want a really smooth sauce, blend melt the cream cheese in a pan with the broth and cream of chicken soup and blend it with a hand blender. Quick, easy, delicious!!

French Pastry Pie Crust

Excellent crust!! A good tip is to measure your 5T of water from a small bowl of ice water. I used one right away and rolled the other up in wax paper and stuck it in a ziplock in the freezer. It worked just as well as the one I used right away. I used them both for coconut custard pies and received as many complements on the crust as I did the pie!

Creamy Cajun Shrimp Pasta

Delicious!!! My only suggestions is to look at the ingredients on your Cajun Seasoning to check the salt content before mixing it in- mine was really salty so I used a little less of that and added ground cayenne. (My husband and like spicy foods.) We will definitely make this one again!

My husband and I thought these were delicious!! I made them to liven up a leftovers night. I can't wait to make then again. I used canned spinach because that was all I had- I let it drip dry in a strainer and then patted the extra moisture out with paper towels. I also used a mixture of light and fat free sour cream to cut down on the fat.

Slow Cooker Tipsy Chicken

Wonderful, easy and delicious!! My husband and I loved it and we will definitely make it again. I made some changes, but only because I was trying to fit the recipe to what I already had in the pantry. I used chicken breast, a 2nd cream of mushroom instead of cream of celery, added some garlic, onion, parsley, oregano, and a pinch of basil, substituted Pinot Grigio, and served it over angel hair. I left out the olives, but only because we didn't have any.
