Buffalo Style Chicken Pizza

If you love buffalo chicken, you will love this pizza. It's easy to make, and you can make it even faster by using precooked chicken strips (I use Tyson southwestern seaseoned grilled chicken strips), Frank's buffalo wing sauce (cuts out the need for butter and cuts some calories), and Boboli pizza crust. I also do half mozzarella, half sharp cheddar, and add some red onions. If you want to cut the calories, you can easily do so by using light dressing and light cheese, and the buffalo wing sauce rather than mixing hot sauce and butter. You can also reduce the amount of cheese and salad dressing to cut it even further - this recipe turns out VERY cheesy and saucy. Tasty, but fattening for sure.

Spinach and Blue Cheese Soup

I'm a big fan of blue cheese and cheese soups, so I thought I would love this. Unfortunately, I didn't care for it, and neither did anyone else I tried to give it to. It didn't seem creamy enough for a cheese soup. I made it according to the instructions, except that I used fresh spinach as some other reviewers did.

Tomato Gorgonzola Soup

This is an amazing soup - as good as anything you will get in a restaurant. I make it exactly as the recipe calls for, and have recieved nothing but complements.

Quick and Easy Green Chile Chicken Enchilada Casserole

I love this recipe and make it all the time! The only thing I do differently is simply coat the tortillas in the enchilada sauce instead of charring them (it turns out fine), cook the chicken in the crockpot instead (easier for me), and mix the chicken with the sour cream instead of doing separate layers. This is a huge hit.

Creamy Macaroni and Cheese

Okay, but not great. I like both creamy and baked mac & cheese, but this one didn't turn out as creamy as I hoped from the picture. I used regular milk, but I don't think that was the problem since other reviewers did as well. The sauce turned out very stringy and grainy. I know some people said to use Velveeta to combat that, but to me the whole point of making home made mac & cheese is to use real cheese.

Slow Cooker Chicken Stroganoff

This is great, very tasty and good enough for company. I did follow the advice of some other reviewers, however, and it really made this a five star dish. First, I put the chicken in the crock pot with about 1/2 cup of white wine, plus the margerine. Instead of Italian dressing mix, I just put in some dry Italian spices. I also used fat free cream cheese, and it was still rich and delicious. I'll definitely be making this again.

White Chili II

This is a great recipe. I did make a few changes, though. I used one can of cannellini beans instead of a second can of great northern beans, just for variety. I also decided to drain the beans instead of add the liquid, and I'm glad I did. We like a thicker chili, and the chicken broth and flour base was just enough for us. The spice combination was perfect, but I upped the amount on all the spices because we like it spicy. I also added oregano and some cayenne pepper as well, and tossed in some fresh cilantro at the end. Because we like it spicy, I substituted one of the bell peppers for a New Mexico chile and two of the jalapenos with habaneros. To really set it off, squeeze some lime juice over each serving - trust me on this.
