Caroline's Chocolate Fudge Frosting

Oh, this is good! Much better than the buttercream frostings I hear referred to so often. I used a double dose of this recipe to frost my first cake ever, a 4-layer devil's food cake, and it turned out very well. Everyone that had a piece absolutely adored it. I loved the frosting, especially. Even when the cake itself became dry, the frosting was still moist and delicious.

Jezebel Sauce

Ooh, this is hot. If you think that the fruit spreads will mask the horseradish, I have a bridge you might be interested in buying. I'm not particularly fond of horseradish, but my Dad is, and he looves this, especially with the cream cheese. This recipe also makes an incredible amount, filling a 28 ounce spaghetti sauce jar to the top. Easy storage! This might stick around till next Christmas....

Chestnut Soup

A surprisingly rich soup, it served well as an appetizer to our Christmas Day feast. The chestnut flavor was strong, and the onion and spices accented it well.

Baked Corn

This is a great twist on the conventional corn bread. When using sweet corn, it has a nice sweetness to it that is offset by the saltiness of the rest of the ingredients, making it an interesting (in a good way) flavor combination. It is surprisingly filling, because though it is mainly comprised of corn, there is still a significant amount of butter in it. I see that as a plus; this will be around a much longer time, for snacking during the next week.

Gourmet Sweet Potato Classic

As a Christmas present to my Dad, I prepared the Christmas Day feast, tailored to fit his diet. He can't eat meats or high-fat foods, he has teeth problems, and he especially enjoys complex flavors and foods that are similar to what he ate as a child growing up on a farm. This was the PERFECT main dish for the meal. He adores sweet potatoes, as well as pecans, brown sugar, and the various other flavors that were evident in this dish. It was flavorful, light, soft on his teeth, and everything he wanted! He was most pleased with this dish. I was too. He is going to be reheating this for the next week for meals, and I'm sure it will be just as good at each reheating.

Spaghetti Salad I

For me, this is a year-round recipe. My Dad loves it and considers it my specialty... Little does he know it's not my creation at all! This is a sure winner every time with him. It's so easy to make, tastes great, and lasts such a long time. I should make this all the time! Luckily I have a well-stocked spice rack, so going shopping for ingredients is pretty cheap.

Cinnamon-Roasted Almonds

This makes A LOT of almonds, and it's worth it. They are great snacks, and though both myself and my Dad love them, we are slow in eating them. Consequently, we have a good store of them for the future, and these will certainly keep well. I bring a small baggie of them with me when I go on walks.

Cranberry Orange Loaf

Mmmm! I cooked this more for my Dad than myself, but I realized I loved this recipe too! The sweetness of the bread is countered well by the cranberries. In the winter season when it's especially hard to find good fresh berries, cranberries are plentiful and _cheap_, making this a fantastic bread by its price as well as its taste.

Devil's Food Cake I
