Overnight Apple Cinnamon French Toast
I made this for my family on Christmas Eve for Christmas morning brunch. It was super easy and very tasty. Next time, I will try using sliced french or italian bread. Drizzling the syrup over the top & then broiling it was ther perfect finish! It carmalized on top & made it gloriously chewy & crispy. We had sausage patties with it, special Christmas coffee, & grapefruit halves. It was perfect for a holiday breakfast.

Eclair Cake
This was phenomenally easy to make! My 7 year old twins were able to help. I have made it several times since the beginning of the holiday season. Made it for Thanksgiving for a pot-luck at my in-laws & it was one of the first desserts gone despite the table full of pumpkin & pecan pies. I've made it the way it's written, but we've also made it with banana pudding, with toasted coconut & chopped up marachino cherry bits on top-it was like a sunday! We've also made it with toasted coconut, sliced bananas & (well-drained) mandarin oranges. It made a fruity & tropical fresh dessert.
