Beef Stroganoff III

Unaltered this is a fantastic recipe. I harvest wild mushrooms and had some dried ones on hand. I rehydrated them in hot water being careful to make sure I'd have at least 10 oz of "mushroom water" left over. I removed the rehydrated mushrooms and added beef bullion to the mushroom water and used that in place of beef broth. OUT OF THIS WORLD! Also, because dried mushrooms tend to remain a bit tough, I added them to the mixture at the beginning of the simmer to get them extra cook time. To up the creaminess you can also add 4 oz of cream cheese.

Date Nut Bars

Easy and straight forward. Date bars are nostalgic for me and this recipe takes me there. Sweet but not cloying. The dates and nuts work in balance to really bring this date bar forward. No need to "gussy up" this recipe in my opinion - it would detract from this gem. The only thing I did different was use unprocessed dates and unshelled nuts and only because that is what I had on hand. It significantly prolonged the process but it was well worth it in the end.

Chocolate Cornstarch Pudding

All Day Apple Butter

GREAT flavor. I used a food processor to shred the apples and saved a great deal of prep time. Do not be afraid to let it sit uncovered longer in the final process to obtain the final consistency you want. I let mine go 1.5 hours in the end and it came out perfect. My clove was very fresh and I should have cut back just ever so slightly but as is it is fantastic. Highly recommend giving this a try, espeically if this will be your first attempt at making apple butter.

Sweet and Sour Sauce II

Excellent like it is or substituting ketchup for the tomato sauce. Another variation split the white distilled vinegar with seasoned rice vinegar and split the water with pineapple juice. Yum!

Blueberry Sauce

Wife and kids enjoyed it. The orange juice flavor overshadowed the blueberry flavor. It is tasty but not the blueberry flavor I was expecting. More like a blueberry-orange sorbet.

Simple Garlic and Basil Pesto

Even after a couple of attempts and adjustments my pesto seemed far oilier than necessary. The flavor was good but not excellent. With some more tweeking it would likely come together.

Hummus III

This is now my stand-by hummus recipe. I add more garlic than is called for and cut back a hair on the lemon juice (I used bottled vs fresh - probably the difference.) Cooked from dry garbanzos taste FAR better in this recipe and brings more to the palate and nutrient label.

To Die For Blueberry Muffins

Relatively easy to make and the rave at the office. Be sure to get some of the cubed butter on each muffin to complete the topping correctly OR you'll end up with a sweet powder instead of that crust. I think that's still a win-win unless you don't want it on your lapel!

Tropical Coconut Black Bean Soup

This is an excellent soup! As a base, I'd give it 5 stars. However, stand alone, unless you like the flatter side of foods, small adjustments to this recipe are warrented. In my second batch I used black beans from dry and added 1/4 tsp crushed cumin seed, 1/4 tsp cayenne pepper, 2 1/2 cloves (1 1/2 tsp) minced garlic, and a 1/4 tsp of cajun seasoning. Redundent? It was WONDERFUL. I'd also strongly recommend using the chicken stock. Finally, I threw 5 sliced medium button mushrooms, an extra (1) cup of black beans (after the blending) and 1/2 cup chopped onions for added body and mouth feel. The recipe as is is very good and it WIDE OPEN for your own added tastes.

Chocolate Meringue Frosting

I found this to be a little heavy on the butter flavor. Next time I make it I will probably cut back on the butter by at least 1/2 cup and adjust from there. It made it VERY rich. I would likely chill it just a bit first before spreading it as well and wait until the cake is thoroughly cooled. The butter base doesn't hold up well on something above room temperature. Overall flavor met good reviews with the family!

Strawberry Rhubarb Pie

A very good and easy recipe. It is heavy on the nutmeg and will be cutting way back on my next preparation of this pie. Beyond that, certainly a keeper! A variation I have done - used the "blue" sweetner made "for recipes" as a substitute for suger - top notch!
