Easy Garlic Broiled Chicken

Reviewed: May 2, 2013
My chicken came out beautiful. Unfortunately not the awesome flavor I was expecting. I've made many soy sauce based marinades and they are indeed awesome. I think this would have been better if I had marinated the chicken for a couple hours prior to cooking. I will try again, but next time I will marinade for a couple hours if not overnight to let the chicken absorb the flavors before cooking.

Cajun Catfish Supreme

Reviewed: Apr. 14, 2013
Very easy dish... As I was preparing it, my daughter walk through and said "ugh". As I was cleaning up after the meal, she asked me to make it again. Go figure. Served with brown rice, sautéed spinach and garlic toast. The only change I made was to add a bit of garlic.

Southern-Style Neck Bones

Reviewed: Mar. 19, 2013
Virtual High Five KERYNE!! These were delicious. My mom had bought me one of those heavy roasting pans as a gift, and I had been dying to try it out. I wanted short ribs, but they were too expensive, so I picked up some neckbones which were really inexpensive. I found your recipe last night, and decided to give it a try. The only thing I changed was that I added carne asada seasoning instead of salt. My mom came over and had some, she said they didn't even taste like neckbones. I lucked up and the packs that I had were very meaty! Next time I'm going to do a wine braise. Yummy! My mom teased me as she was leaving because I was standing in the kitchen eating them out of the pot! LOL! No need for sides, because it will all be gone! Thanks again for this simple, but awesome recipe.

Crawfish Potato Soup

Reviewed: Feb. 22, 2013
we had a few cold windy nights, so I made this for dinner. It was good, simple to make. My only problem is that it wasnt as thick as I would have liked. I'm big on seasonings, so I did add creole seasoning and red pepper. My daughter who had come over for dinner originally didn''t want any. Once it was ready, she actually ate two bowls of it! If you like this one, try the crawfish and corn soup. Its really good.

Creole Chitterlings (Chitlins)

Reviewed: Dec. 11, 2012
This is my 2nd time in life making these. Followed the recipe, didnt have a bay leaf. Added 1 red pepper. I must say that the prep time is definitely over 20 mins. More like an hour. I only did 5lbs. Went grocery shopping yesterday, saw the chitterlings in the freezer section and decided to give it a try. Initially I was going to give them to my mother to cook, but after finding this recipe, I decided to try it myself. Now if I had to clean these back in the day when they weren't pre-cleaned??? We would NEVER have these. Its alot of work! (Kudo's to mom) Anyways, thanks for the recipe. It was simple and straight to the point. The hard work paid off. Everyone enjoyed them.

Cajun Crawfish and Shrimp Etouffe

Reviewed: Nov. 5, 2012
This was a probably one of the best dishes I have made off of this site. I followed the recipe 98%. Per a previous reviewer, I did cook the veggies a little longer so they would soften. I didn't have cayenne pepper, so I used a red pepper from my garden. For the fish stock, I boiled the shrimp shells with old bay and seasoning salt. I also used canned diced tomatoes. I chopped all the veggies before I started because I knew I had to keep an eye on the Roux. Once the Roux is done, all you have to do is throw everything else in. It wasn't hard at all to make. I used the crawfish that you find in Walmarts, in the frozen fish section. This was awesome. The ingredients are simple. The seasoning was perfect. The consistency was perfect. The taste was better than any restaurant. This is a must try if you are into seafood. Next time I will add diced hot sausage.

Creamy Shrimp Scampi

Reviewed: Oct. 4, 2012
This was good. Comparable to the shrimp scampi at Grand Luxe and Cheesecake factory (if you flour and fry the shrimp). I recommend using the rice instead of pasta. As the sauce isn't thick. The rice will absorb the excess. Gonna have my leftovers with brown rice for lunch! I also used alot more garlic. Will definitely make it again!!

Jim's Salmon Patties

Reviewed: Sep. 30, 2012
There were the best salmon patties I have ever had. My mom makes salmon croquettes... so that is all I knew. These were moist and very flavorful. Will definitely make again. The only change I made was I substituted panko for cracker crumbs.

Artichoke Spinach Lasagna

This is actually my first vegetarian dish. My only substitution was soy cheese, and I made a faux feta from tofu. My family loved it! We are true meat eaters and with this lasagna, we didn't miss a beat!!

Party Chicken Wings

Reviewed: Jan. 1, 2012
Made these for New Year Eve. They were a big hit!! Asked hubby for his rating 1 - 5 stars, he gave it a 10. The only thing I did different was I cooked as stated. I used drummettes. After I cooked them, I put them in a crockpot to keep them warm during the party. I added the remaining marinade to absorb the flavor. The longer in the crockpot, the better they got. By the end of the night they were falling off the bone. As I would catch my hubbies eye during the party - he kept giving me the thumbs up on the wings. These were definitely a hit. Possibly my new go to dish for parties.

Crawfish and Corn Soup

Made this last night! Took the suggestion of one reviewer and added a small chopped red potato. (Don't add the potato too early or it will turn to mush) This was delicious!! My mom enjoyed it too.

Slow Cooker Carnitas

Reviewed: Sep. 28, 2011
This recipe makes me use the 7 letter word! AMAZING!!! This was sooooooo good! I couldn't stop eating it! i didn't have the comin or oregano. I used Lawrys seasoning salt, black pepper, garlic powder, coriander, and cinnamon for my rub. I added the chicken broth and some minced garlic. (I almost used French onion soup, will try that next time) I took the advise of other reviewers, after cooking, I shredded the meat and put it on a flat pan and placed it in the oven for 15 - 20mins. OMG!! This was the best ever! Everytime a see a Pork Roast I will buy one.

Hearty Tuna Casserole

Reviewed: Apr. 26, 2011
I made this last night for dinner. While searching receipes, this is the only one that didn't require a condensed soup, so I chose this one. I omitted the tomato and zucchini (didn't have any), added mushrooms and spinach. Used Dijon mustard (thats all I had). Seasoned to taste while in the mixing bowl. Added some Worcheschire sauce (copied that from another receipe). As other reviewers mentioned, it wasn't super creamy, but that didn't stop me from eating it. Yummy!! Will definitely make this again.
