Mexican Wedding Cookies (Polvorones)

these are very nice. definitely double the vanilla in the recipe. i used pecans..nice and added a few very fine chocolate chips like the store bought kind..also nice, but too much chocolate overwhelms the delicate buttery taste...yes..real butter only. takes more like 2 -2 1/2 cups of sugar to coat well...worth the effort...

Plain Caramel Apples

i actually love this one but there are a few things that would have made it easier. first i got the wax off using dishsoap and hot water and scrubbed with a towel second if you freeze the tray first and put parchment on it it works like a dream and if the apples are cold it works better..i put them in the fridge a couple hours and then put them on the tray in the freezer for 15 minutes. the sprinkles need to go on immediately if the apples are cold because it hardens quickly but they come off the parchment very easily that way ( if they stick just stick them back in the freezer a bit)

Chocolate Mice

adorable! i made mine with greek yogurt instead of sour cream...worked very well. about a half a pack of the famous chocolate wafers is one recipe (if you don't use them for coating) didn't have almonds on hand so used peanuts for ears and have trouble finding drages so used white gelatin pearls for eyes...the ones i coated in powdered sugar looked splotchy and strange and made the eyes hard to stick to them so i left it off and they were great just plain...huge "awwwww" factor...everyone young and old adored them (p.s. place them individually in seasonal cupcake cups and add a few chocolate sprinkles for realistic looking mouse poo to add to the fun..tee hee)

Mema's Corn Fritters

I made these as directed (close as a non-measurer can at any rate) and they were perfect. My daughter and I ate the entire batch for supper. Always a plus when I can both make a new dish that is easy and comes out perfectly AND meet the picky desires of my kid!

Warm Artichoke Dip

i agree that it needs more garlic and i am not a huge garlic fan. i tried it with greek yogurt because i despise mayo and it was only...so so...didn't have the creamy consistency i have seen when served this at parties...will go back to the mayo because i think that perfection should be left alone

Buffy's Refried Beans

i like this style recipe for the beans better than the vegetarian ones. i don't like the idea of using lard so i substituted vegetable shortening in the same quantity...makes for a much creamier taste. also i added cumin, salt and pepper and a touch of garlic onion with a little salsa in the final mix. my girls ate it like it was going out of style. usually my recipes miss out on account of kitchen inexperience, but this one was an absolute winner

Costas French Market Doughnuts (Beignets)

I have had MANY beignets from Cafe du Monde and these really hit the spot. I usually change something in every recipe but made these exactly (except for halving the recipe). They are the real deal--totally authentic and easy enough for a first timer.

Mama's Summer Squash Casserole

This recipe totally rocks.I had to tweak it to accommodate what I had in the fridge and pantry and used Greek yogurt and Panko instead of sour cream and crackers. I also used two eggs--just because I wanted to and it was absolutely wonderful! My daughter, who is WAY into healthy eating went back for seconds...later thirds.

Peach Pie

Awesome pie. The previous reviews helped. Made my crust (Pie crust I recipe with butter instead of shortening) and slightly modified this recipe by using half brown/half white sugar and by dumping all the ingredients together in one bowl and adding cinnamon. I also let it sit in the oven after baking or it would have been soupy. Rave reviews and was so good that we all ate it for dinner too.

Crumpets

first time making them...the amount of batter this recipe makes could stand to be doubled or tripled in the very least. i may have let it rise too long because i didn't get enough bubbles in the pan..have to work on that one....but overall i ate them with homemade butter and was very satisfied....i need to tweak my technique though
