Mediterranean Quinoa Salad

I dont usually review things but i HAD to review this. SO DELICIOUS!!! I changed only a couple things. 1. I used chick peas cause I hate chicken. 2. I used sundried tomatoes cause I hate kalamata olives. 3. I added some cucumber cause it was in my fridge. And it was FANTASTIC! Made a huge batch and have been eating it for lunch and as a side for dinners!

Strawberry Oatmeal Breakfast Smoothie

OMG...I love this! I did change a few things but only because I couldn't wait to try it until I went to the grocery store!!! 1. I did blend up the oats first like others suggested. 2. I used skim milk. 3. I did not have frozen strawberries so I used a few splashes of grape juice. 3. My bananas were frozen. 4. I did not add sugar because of the sweetness of the grape juice. OMG....so good!!! I love the hearty texture and earthy flavor the oatmeal gives. I cannot wait to try it with the strawberries! I want one right now! lol

Bean Soup With Kale

Very very very good!! I added celery and carrots just to pump up my veggie intake! So healthy and easy! I made a batch for my parents and they are already requesting more!

Perfect. I may have added more cayenne but made the recipe exactly as stated. I now make it once every few months in huge batches and freeze in indivdual portions. Super yummy and healthy!

Vegetable Lovers' Fried Rice

this was fabulous! I used brown rice, sesame oil and added shrimp !! (or you could eat some shrimp on the side...I just mixed mine right in) It was so good, and will definately be a staple from now on in my house!

Flourless Peanut Butter Cookies

Just made these last night. PERFECTION! I had to force myself to stop eating them! I added a tsp of vanilla, a tsp of baking soda and used half white and half brown sugar! I made mine bigger and probably had to cook them a total of 12 min, but the were still slightly underdone and chewy in the center!! Just how I like them. I did the fork thing on the first few...the second batch I added chocolate chips and didn't press them down at all when they came out of the oven. So good. I may make some more tonight!!! AND EASY!!

Saltine Toffee Cookies

my babysitter used to make these all the time when i was a kid...however she did not spread the chocolate chips and usually used a mix of butterscotch and chocolate chips AND she topped hers with shredded coconut not nuts! So good!! Took me back to my childhood!
