I had a friend over for a chat the first time I made these. I had never been too fond of ginger cookies, but within 30 minutes of these coming out of the oven, they were all gone! Made a few changes, accidently only put 1/2 c butter instead of 3/4 c- did not use margarine. Made these again later with correct amount of butter, and the cookies were not near as soft and chewy (I have made these several times now). Don't know it that has anything to do with the altitude? I live at 0. I also upped the amount of cinnamon to 1 tsp. I also followed others suggestions and substituted brown sugar for the white, and also added a Tbsp of orange juice.
