Greek Garbanzo Bean Salad

This is a fantastic healthier alternative to pasta salad - which we love to eat for lunch. I made this today and served it over a bed of fresh spinach. The only thing I did differently was add more feta to taste. My husband and I loved it. Will definitely make again.

Pumpkin Spice Cookie

I got this recipe from a friend's mom and have been using it for years. I add chocolate chips and it really takes it up a notch. Love how easy and flavorful these are!

Whole Wheat Bread III

This is a simple and delicious recipe for wheat bread. I only used 1/2 Tbl of sugar and for the cornmeal I used a mixture of cornmeal, flax seed, and chia seed. I also subbed 1/2 cup oatmeal in place of 1/2 cup of the flour. It's a forgivable recipe that lets you add extras to your liking.

Hearty Multigrain Bread

LOVE this recipe! It's very flexible with the amount and types of grains. I doubled the recipe, added extra flax seed, substituted chia seed for the millet because that's what I had on hand and added a couple of tablespoons of oat bran as well. I put it in my bread machine on the dough cycle, then transferred to a loaf pan and baked in the oven at 350 for 20-25 minutes. My husband and I prefer the texture of oven baked bread so that's the only reason I did it that way. Either way, this is fantastic and it made my turkey and avocado sandwiches at lunch today taste oh so good!

Easy Apple Coffee Cake

Made this as directed except for using pecans because that's what I had on hand. This is a delicious and moist cake! Mine needed the full 70 minutes and came out perfect. My husband gave this an easy 10 which is saying a lot because he doesn't just hand out 10's!

Chewy Chocolate Chip Oatmeal Cookies

I wish I had read the reviews before making these! Definitely a 5 star recipe if not for the salt! These were way too salty, next time I will reduce the salt by half. Other than that they are great - I used the amount of flour and baking soda listed in the recipe and the cookies came out soft and chewy and rose perfectly.

Marinated Baked Pork Chops

I had 1 lb. of pork chops and it was a perfect amount of marinade for extra to serve over mashed potatoes. This was super easy, fast, and delicious. My husband isn't the biggest fan of pork but he really liked this.

Quick Yeast Rolls

These are fantastic. Followed the recipe exactly, the dough was very sticky but I persevered and didn't add extra flour. Definitely worth the extra hand washing it took to get it off my fingers. The texture is perfect! Top it off with some cinnamon honey butter and you can't go wrong. UPDATE: I made these again the very next morning, I substituted butter for shortening and it worked great. Also, spray an ice scream scooper w/ cooking spray and use that to scoop the dough into the muffin pan, it works like a charm!

Original Homemade Italian Beef

My husband and I LOVED this! My roast was around 2.7 lbs. and I only used 2 packets of Italian seasoning and added the peppers to taste, no juice. We put provolone cheese on some hoagie buns and broiled them to toast the bread and melt the cheese. We raved about them all through dinner! I served it with a spinach strawberry salad and homemade baked french fries. ALSO: I try to share this secret with as many people as possible - when your meat is ready to be shredded, if you have a stand mixer (kitchen aid, bosch, etc) put your meat in your bowl with your basic paddle attachment and turn it on low. Your meat will be shredded in 20 seconds instead of slaving away with forks.

Baked Salmon II

Delicious! Didn't have time to marinate, so I just sprinkled the spices on both sides and punctured the filet with a knife so that it would be infused with the lemon juice when I poured it on. I'm sure it would have been even better if I had marinated it!

Tonkatsu - Asian-Style Pork Chop

Loved this. I used 4 pork chops and kept all other measurements the same (based on 8 servings). Whipped up the Tonkatsu/Katsu sauce from this site as well. Delicious.
