Tackee David's Split Pea with Ham

I have never made split pea soup before...but love it! This was so.....good..I loved the spices and even added a little more garlic to it...used chicken broth instead of water and some carrots. Wonderful taste!

Easter Eggs

Wonderful ! When I was a kid we had "cooking class" in school and we made Easter Eggs. They were good ...people didn't have money to buy much of anything....They were made with mashed potatoes ! (FYI....1/4 c mashed potatoes, 1/2 Tablesp softened butter, 3/4 c coconut, 1-lb. confectioners sugar, 3/4 teaspoon vanilla.---the icing was baking chocolate with a dap of parafin wax, (that made the icing shiny) They were good , ???? , but nothing compared to these! Just thought that might be an interestin tidbit of info about "the Old Days of Baking". I'm 75 and this recipe is older than dirt! Happy Easter everybody!

Toscana Soup

This is one of the best soups! I used "Bob Evans" sausage and browned and chopped into small chunks while cooking. Removed sausage and added 1 T. olive oil, browned onions until translucent, then added garlic for 1 minute...added 1 box/32 oz. of prepared chicken soup broth 1 heaping Tablesp. chicken base, 1 teaspoon dried oregano leaves, 1 even tablespoon "Mrs. Dash" Italian blend seasoning , shake of ground black pepper, 4 large diced potatoes. Simmered that for 15 minutes ,and transfered to crock pot along with..2 cups water, and sausage..... continued to cook until potatoes were done. Skimmed top to remove grease with a grease skimmer.Then added evaporated milk and frozen spinach (that I drained well and squeezed dry between paper towels), and 1 cup jarred button mushrooms quartered.... and cooked for 1 more hour on low. One of the best soups!!!!!!!!Thanks

Cream Cheese Kolacky

This is the same great cookie my mom made ...well I'm 72 so....many years ago...I have seen another way just recently to make them. Cut in circles, put filling in the center and pinch up 3 corners to make a hat shape make sides on them..or sort of like a triangle with sides. This seems a good way to solve the the problem of the filling coming out the ends. Make them small though. I'm going to try them this time as"hats" . Great recipe!

Best City Chicken

I made this many times when my kids were small using veal and pork. A very good friend of our family from Michigan used to make these and gave the recipe to my mom and of course she passed it on to me...LOVE IT! I haven't made it in a while, forgot it....but I'm going to make it this week and have the kids over for dinner...brings back many memories. Thanks

Apple Crisp IV

Love this can even make it in a pie dish and you have a beautiful pie without a bottom crust. It was even better the day after, cut into wedges and served as a pie. I'm even going to try this with half peaches and half apples. I used farm fresh gala apples. Thanks, great recipie.

Sparkling Grapefruit Pie

This is pretty good but it is more like a jello in pie crust. While in Texas I was given a recipe for a Texas Grapefruit Pie which is more like a chiffon pie, so refreshing..try it . It uses marshmallows and grapefruit sections, etc. I shared it under my Profile.

Merwin's Shrimp Gumbo

I have never eaten Gumbo before. This was wonderful. I changed only a few things that I hope didn't change the flavor too much. I used 1/2 veggie oil and 1/2 olive oil.....2 cups water and 7 cups chicken broth......cut up the chicken and added it to the pot along with 14 oz. crab meat that I added at the end along with the shrimp.I didn't find the roux hard to make at all (mine was a little darker then peanut butter). I watched it very carefully and stired after about 2 minutes and kept doing that until the roux was just right. Served over rice. We loved it! Thanks for a great recipe.

Egg Sandwich

How my daughter showed me to do this is...use a small bowl or a microwave egg cooker (WalMart) , spray it with Pam , beat 1 egg in the bowl or cooker your going to cook it in, pop it in the microwave for exactly 1 minute. while this is cooking pop either a muffin or toast in the toaster. Turn the egg out of the bowl onto the toast add a piece of cheese and/or cooked bacon....put the top on and ....perfect! No soggy toast and no need to return to microwave. So easy the kids can do it.
