Chicken Creole with Chile Cream Sauce

Reviewed: Feb. 15, 2013
I found a cajun seasoning recipe on here and used that. I also used pam spray instead of olive oil. I doubled the sauce since we like lots of sauce on the rice but I had more than enough left over. It was really good....had a mexican taste to it.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Reviewed: Mar. 10, 2012
I sauteed garlic, onions, and chopped spinach in butter. Added uncooked shrimp and cooked until slightly pink. I removed the shrimp and added mushrooms for a few minutes. Added 8oz of cream cheese, basil, and a few shakes of salt and pepper. Added some milk and pasta water until saucey. I shook some Mrs. Dash on the shrimp and then added it to the sauce. Heat through and served over hot pasta.

Baked Pasta with Sausage and Baby Portobello Mushroom White Sauce

Reviewed: Feb. 22, 2012
As written, it is a 4 star recipe. You only need 1 tbsp of oil when sauteeing the sausage (there's plenty of grease when removing the sausage). I added chopped onions to the garlic and canned mushrooms. I ended up using the entire pint of heavy cream (wanted it really creamy) and thickened it up with corn starch. DON'T FORGET TO ADD THE PARMESAN CHEESE. Used about 6 oz of mozzarella cheese at the end.

Authentic Louisiana Red Beans and Rice

Reviewed: Jun. 17, 2011
Used 3 cans of drained kidney beans (so no overnight soaking) and veg oil instead. Added more salt, pepper, and cajun seasoning. Also, didn't have andouille sausage so used smoked sausage. I simmered the vegetables and seasonings for 1 hour and added the beans when I added the sausage. Cooked for 1 more hour and smashed some of the beans on the side of pot to make the sauce thicker. However, make it as written before adding any extra ANYTHING. Plenty of reviews says it's too spicy or salty and plenty say there's not enough spicy or salt.

Pat's Baked Beans

Reviewed: May 28, 2011
This is a 5 star recipe! You can follow it to the "t" and have delicious beans. Sometimes I use northern beans or i just double up on the regular baked beans. You can double up on any beans if you don't like a certain bean. I also used 1/4 ketchup and 1/2 bbq sauce, less molasses, more brown sugar, less mustard, and a few shakes of cayenne pepper.

Spicy Garlic Lime Chicken

Reviewed: May 13, 2011
Burstful of flavor! Followed recipe exactly as written except I didn't add the extra garlic powder at the end. I read from another reviewer that it was too garlicy when you do that. Served with red beans n rice with green beans. Tasted great! *Recommend doubling...not enough for 8 chix breats

Kielbasa with Pasta

Reviewed: Apr. 28, 2011
We liked this...added more green pep and onions. Used 1 can italian diced and 1 can petite diced. Had dry thin spaghetti on hand and some leftover cream cheese, so I put 1/4 of a block in the sauce (saw a reviewer wanted it a bit more thicker). Also added some basil, oregano, and cayenne pepper. Didn't add the butter...didn't need it.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Apr. 24, 2011
Really good! Omit the oil...you don't need it. Once the sausage was 90% cooked, I placed it in a chopper and hit "pulse" a few times. Used 2 cans of Italian diced tomatoes and added chopped spinach. Didn't add parsley since my "green" was spinach. Lastly, my fiance said to make the sauce a little bit thicker. I did simmer to reduce, but I'll mix in 2 tsp of cornstarch to the heavy cream next time.

Easy Chicken and Broccoli Alfredo

Reviewed: Apr. 17, 2011
My fiance and I really like this. I did add garlic and used frozen broccoli instead of fresh. Added a slurry (about 2 tsp cornstarch and 1/4 cup milk) to the chicken sauce to thicken it up. One surprising thing...chicken pieces still were a little on the bland side even though it was cooked in that salty italian dressing. My fiance made the suggestion of marinating the chicken in your choice of marinade before cooking. I think italian sausage will work well with this recipe too.

Apple Strudel Muffins

Reviewed: Apr. 17, 2011
Followed everything as written. Used 2 medium jazz apples (chopped) and 1 medium jazz apple (shredded). Only tip is to use light brown sugar if you want a lighter muffin color and to use dark brown sugar if a browner muffin is desired. Delicious!

Southern as You Can Get Collard Greens

Reviewed: Apr. 5, 2011
This is the closest recipe I could find to how I do mine. In my large pot, I cooked 4 strips of bacon and onion together. Then added 1 Tbsp BROWN sugar, 2 cans chicken broth, 2.5 cups water, few shakes of crushed red pepper, and 1 Tbsp of white vinegar. Simmered everything for 1 hour. Added greens (used a bag of pre-chopped greens or kale), brought to a boil, and simmered for about 2-3 hours. Had to make sure the stems weren't tough. It was my first time and I'm pretty proud of myself :)

Sweet, Sticky and Spicy Chicken

Reviewed: Mar. 26, 2011
Really good way to use up extra veggies for stir fry. I used a little more hot sauce and honey since I had chik-fil-a chicken pieces (my friend's husband works at a perdue chicken factory yay!). I saw a review that said it had an overwhelming soy sauce taste, so I used 1/8 cup since I don't like a strong taste like that. I simmered the sauce while the chicken was cooking. Also, used ginger powder and dredged my chicken pieces in flour seasoned with pepper, paprika, adobo seasoning, and a few shakes of seasoned salt. Served with stir fry veggies, chopped onion slices, orange pepper slices, and rice.

Muenster Chicken and Mushrooms

Reviewed: Mar. 22, 2011
I horizontally sliced the really big chix breasts instead of pounding (lazy day) and then Seasoned the chix breasts with red pepper, onion powder, garlic powder, basil and seasoned salt. Used 1 egg instead of milk and seasoned panko chips with red pepper, italian seasoning, parsley, and fresh minced garlic. I didn't fry the chix breast for fear of all the crumbs coming off, so I refrigerated them for 1 hour to make them stick. Topped each chix breast with sauteed mushrooms and topped with cheese sliced (if the cheese is on top of the mushrooms, it holds them in place). Poured 3/4 cup chix broth mixed with 1/4 cup white wine around chix breats.

Sausage, Peppers, Onions, and Potato Bake

Reviewed: Mar. 19, 2011
I used 1 green, 1 red, 1 yellow, and 1 orange pepper. Had only 1 onion plus I think 3 would be too much. I followed a reviewers suggestion and added Adobo seasoning, thyme, garlic and parsley. You have to add the seasoning of your choice so it's not bland. Really delicious!

Creamy PHILLY Pesto Chicken

Reviewed: Mar. 6, 2011
This was really good...I too had my eye brow raised when there was no garlic in recipe. Make sure you season the chicken or else you'll end up with a tasty sauce with bland chicken. I added 2 tbsp of white wine to deglaze skillet. I also recommend doubling cream cheese and chicken broth if you want extra sauce for pasta, rice, etc.

Braised Balsamic Chicken

Definitely use 1/4 balsamic and 1/4 chix stock...makes the balsamic taste not as strong. I also added spinach to make it a balanced meal. Served over rice.

Jerk Grilled Chicken Wings

Reviewed: Nov. 17, 2010
Tasty! I used ground ginger instead of fresh ginger and used a jalapeno pepper instead of habanero. The 1/2 cup of oil is a little much, so I reduced it to 1/4 cup. The recipe makes alot of marinade for 12 wings, so I doubled the amount of wings. Lastly, I baked mine at 375 for 20-25 mins without basting. Turned on the broiler to crisp it up for a few mins and perfection!
