Absolute Best Liver and Onions

Zucchini Brownies

Wow, what a delicious treat! Okay, I halved the recipe because I had an 8x8 pan. I used only 2/3 cup of sugar. Mix was really dry even with heaping measure of zucchini so I added a 4 oz. container of natural applesauce. More like cake but terrific. Surprised no egg. Family loved it. I didn't make frosting, instead sprinkled chocolate chips on top before baking.

Sophie's Zucchini Bread

This is the first time I've made zucchini bread. Of course you can't taste the zucchini- it just adds moisture. Changes I made: I used only 2 eggs, used 1 cup white and 1 cup brown sugar like others suggested. Used 1/2 cup natural applesauce + 1/2 cup oil. Perhaps a little too sweet so will cut down sugar total next time. Good 1st time recipe.

Banana Chocolate Chip Cookies

Delicious! I was looking for a recipe to use up one banana after making a loaf of bread. I halved the recipe since I had just one banana. I used 1/4 cup of butter, did 1/4 cup brown and 1/4 white sugar. I further reduced the baking powder (1/2 tsp). Turned out soft, puffy, I'd say better texture than a muffin - cakey but better than cake! I ate two right away when I got the sheet out of the oven- yum! Good way to use up some banana!

Cranberry Sauce Chicken I

Here's what happened with us: husband who is kinda hard to please liked it; daughter (7) who usually likes what I make didn't; son (3) who eats very little ate it. I thought it was just okay. Cut large breast into thirds, cooked at 350- very moist and tender. Lots of sauce left. Won't be in a hurry to make it again to be honest. But nice to try something different. Quick to prepare.

Shortbread Cookies II

Blonde Brownies I

My first blondies- loved them!!! Easy to make, disappeared in no time. They were gooey and chewy. Husband says 5 1/2 stars. The changes I made: I used only 1/4 tsp baking powder, just a pinch of salt. Used a whole stick of butter-(might as well use it up)- actually forgot (oops) the vanilla- used 1/2 cup choc chips and mixed them in instead of just sprinkling them on top. My pan was 8x8- took a little over 30 minutes. I just kept testing with a toothpick after 20 minutes in 5 minute increments. They are about gone! Yummy!

Oatmeal Chocolate Chip Cookies III

Thank you so much- I was out of eggs but really wanted cookies. I did halve the recipe because I didn't want to use 2 sticks of butter and I melted the butter. These were terrific! Chewy, soft. The dough does easily fall apart, just pack into spoon before placing on cookie sheet. The first dozen I didn't pack so they came out flat- I have eaten 6 already as I type. The second batch are in the oven now, puffier because I packed the dough. I will definitely use this recipe again. Definitely recommend. Did not miss the egg.

Red Potato Chicken

So easy and so good. My husband who doesn't usually eat leftovers asked if we had any left the next day. Great idea for a weeknight when you don't have much time to put dinner together. I used regular italian dressing- didn't have creamy.

Applesauce Oatmeal Cookies

Good cookie! Changes: I used only 1/4 cup butter (easier measuring), added a banana (needed to be used), a tsp vanilla, and then some chocolate chips and raisins for the heck of it. They come out puffy, chewy, I guess cakey. My 2 year old called them "biscuits". Give this recipe a try if you want something healthy and different! Oh, I baked them at 350 instead of 375. As I type this, I'm on my 4th cookie- yum!

White Chocolate Chip Oatmeal Cookies

First I halved the recipe. Due to comments read, I used just 1/3 cup of each of the sugars. I used 1/2 cup olive oil (light tasting, NOT extra virgin) instead of butter. Added a splash of milk. Used only 1/2 cup of chips (plenty). Forgot to add cinnamon someone suggested. Cut salt in half, still okay. Probably could cut soda in half or leave out. I thought cookies were a little salty. Good recipe! Recommend!

Chocolate Chip Pie IV

Easy recipe. Yummy pie! My family really liked it. I used walnuts instead of pecans though. (Just bought wrong nuts.) A little underdone after one hour. Need to test with a toothpick? Mine needed an extra 10-15 minutes. Could be just my oven.

Cake Mix Cookies VIII

Easy way to make cookies. I used olive oil (the extra light tasting kind for baking) and they were yummy. Did not stay around long. My favorite combo is devil's food cake mix with semi-sweet choc chips.

Honey Of An Oatmeal Bread

This was the very first recipe that I put in my recipe box. That was in April 2000. But I never made it because I did not have a bread machine. I finally got a bread machine this Christmas and have made 3 loaves of this bread. Easy to make. Delicious!!! Try it, you'll love it! (I made the 3rd loaf yesterday and it's almost gone!)
