West Indian Curried Chicken

This receipe was awesome! This was my first attempt at curry chicken and it was very easy. I used boneless chicken thighs and sprinkled some Jamaican Chiicken spice that I picked up while vacation on the chicken 15 minutes before browning to add a more authentic taste. I also cooked for an additional hour so that the chicken was very tender...DELICIOUS!

Sauteed Apples

Japanese Chicken Wings

I made this recipe last year for a Memoirs of the Geisha Party and it got rave reviews. I made two changes: I took a short cut by using wingettes and frying the wingettes in a deep fryer with vegetable oil. I am making it again for a holiday party next week.

Fast and Easy Tofu Lo-Mein

The things I liked most about this recipe was the convenience. I fixed it for my family after a long day at work and it only took 17 minutes. It was very good, and like other reviewers said, it tasted even better the next day. The ingredients was easily substitutable. Instead of tofu, I used 1 pound of shrimp and instead of oriental flavored noodles, I used shrimp flavor.

Cream Cheese Pound Cake I

This recipe is great. The only thing I did differently was that I omitted the almond extract and used 1/2 tsp butter extract, and 1 tsp of creme bouquet. Absolutely delicious.

Virginia Apple Pudding

This recipe was pretty good. I followed the other reviewer's advise and added 1/2 cup dark brown sugar and 1/2 cup white sugar, instead of 1 cup white sugar. I also added 1 tsp. of vanilla extract, 1 tsp. of lemon extract. A sprinkle of allspice and a sprinkle of ginger to the batter. It turned out to be quite flavorful. However, I usually like my cobbler to be more crusty and not so spongy.

One Egg Lemon Pound Cake

I agree, the cake took about 50 mintues to cook. But it was worth every minute. I am usually not a pound cake lover. But I figured I would give it a try. Boy was I surprised. This cake was great. Easy to make and delicious. My husband ate nearly the entire cake. I would definitely make again. However, I added a lemon glaze to the top for that extra lemony flavor.

Brown Sugar Meatloaf

I am not a meatloaf eater, but I found this recipe to be absolutely wonderful! My husband agreed (and he's a picky eater). I did have to tweak the ingredients a little. I used 1/3 cup of brown sugar instead of 1/2; ground turkey instead of ground beef; 1 packet of onion soup mix instead of a chopped onion; and 3/4 cup of bread crumbs instead of saltine crackers. I also mixed the ketcup and brown sugar into a glaze and used it on top of the meatloaf. I let the glaze cook on the meat for the last 15 minutes of oven time. It was great!
