Irish Chicken and Dumplings

BBQ Pork for Sandwiches

Made this yesterday for friends and got rave reviews. I used boneless pork ribs and put it in the crockpot with a bottle of beer instead of beef broth for about four hours. I used Budweiser smoked bbq sauce. One of my guests told me he had pulled pork out Texas Roadhouse the day before and this was way better! So easy; I'll be making this again.

Taco Pasta Salad

My family loved this just the way it is posted. I have two people that can't eat onions so I just put them on the side for those who like it to put on the salad. I also put some sour cream on the side as a topping. Thanks for sharing

Steph's Zesty Sweet and Sour Meatballs

Like other reviewers, I loved the meatball recipe. It had a bit too much pineapple for me and not enough meatballs. I would probably double the meatball recipe next time. My family really liked this and will make it again.

Slow Cooker Chicken Taco Soup

This was easy and outstanding! Instead of tomato sauce I used enchilada sauce and it worked wonderfully. I also didn't have canned corn (or frozen) so I substituted cream corn and it worked just fine. Used rotel tomatoes. I put it in the crockpot and it cooked for 10 hours with no negative results. This was really good and we'll be using it again. So easy as a crockpot recipe!

Easy Slow Cooker French Dip

We put this in the crock pot for 9 hours and it fell apart it was so tender. The meat is delicious! I used a light beer and will not do that next time. It needs a lager or guinness I think, for more flavor for the au jus. I would also add more garlic. This will definitely become a regular in my household

Comforting Cube Steaks

I liked it but my family just thought it was okay. I would make it again if I had cube steak and did not know what to do with it. It definitely gives us a very tender cube steak! But reminds me more of a pot roast in the end.

Awesome and Easy Creamy Corn Casserole

This was very, very easy. I made it just as described. It takes about 5 minutes to mix up. I served it warm with some honey on the side. Good enough to be dessert! It goes wonderfully with some pulled barbeque pork.

Pizza Casserole

a favorite for my kids. I am asked to make it every week and any leftovers are gone in a day or two. I have put some black olives in and cut down on the green pepper as it disturbs my tummy. Whatever you put on a pizza would probably work in this dish

Chili-Lime Chicken Kabobs

After reading the reviews I made a bit more of the marinade and then threw whatever fresh leftover vegetables I had in with it to marinate away. I let it marinate for three hours and it really soaked up the marinade and was wonderful! I might add fresh cilantro to it next time. Vegetables I used were red and green peppers, red onion, cherry tomatoes. The marinade is so easy to make that this will become a staple in our home.

Pecan Pie Cookie Bars

I have gotten rave reviews on this and have had to hand the recipe out a few times. When I first made it I used light brown sugar since I didn't have dark. Everyone liked it so much this way, that I have never tried it with dark.

Turkey Tortilla Soup

A staple in our home in cold weather. We probably shred the chicken just before we eat, and it is fine. I love it as a crock pot recipe that cooks away while I am at work!

Dinah's Baked Scallops

This was wonderful! I used ritz crackers. Then I baked for just under 10 minutes and put it under the broiler for the last 5 minutes. I also added some of the extra ritz cracker mixture on top of the scallops in the pan, before I put the melted butter mixture in. This will become a staple in our house.

Brown Sugar Meatloaf

This was too sweet for me. I think I would reduce the amount of brown sugar next time and mix it in with everything else. I think I would also add some barbeque sauce or smoked seasoning.
