Chinese Pork Ribs

We enjoyed this recipe. I only used about 1 1/2 lbs of ribs for my husband and I but made the sauce as recipe states. I didn't measure ingredients, I just estimated the amounts.

Chicken Cacciatore

Yummy recipe. The only thing I did different was replace the stewed tomatoes with a can of diced tomatoes seasoned with green pepper and onion. We served over farfalle pasta and will do again next time I make this. There will definitely be a next time.

Simple BBQ Ribs

Followed the recipe as stated. I boiled for 45 minutes and baked for 1 hour. After 30 min, I turned ribs over and added more bbq sauce. I can't wait to make again. I used Original KC Masterpiece sauce and it worked great.

Fast English Muffin Pizzas

I wasn't in the mood to cook dinner tonight so decided to make these quick english muffin pizzas. I read the reviews first so I toasted the muffins before adding sauce and toppings, which I think is a must! No need to measure the sauce, cheese and pepperoni, just eye ball it. Great easy snack or meal especially when served with a salad.

Sloppy Joes

I followed the recipe except I made a mistake and doubled the amount of pepper I added. It was different from the sloppy joes I have had before because of the barbecue sauce flavor. They were good but I prefer my Mom's more traditional sloppy joes.

Picante Peanut Chicken

Really good meal. I added a tiny bit of sesame oil and more soy sauce and we had it over rice. I didn't bother chopping the peanuts and we thought it worked fine.

Potluck Lasagna

My husband said to rate it 4.5. I forgot to mix the parmesan cheese in with the other cheeses and eggs so I sprinkled some on top. I used a can of diced tomatoes seasoned with green pepper and onions. Very easy to make and makes a great meal.

Cajun Red Snapper

I used cod since that is what I had. I am a sissy, so I added less cayenne and black pepper than what the recipe called for. I didn't measure the ingredients, I just eye-balled the amounts. I melted the butter with the olive oil in the microwave. Seasoned with salt and lemon juice at the table and my husband and I thought it was great.

Best London Broil Ever!

My son and I absolutely loved this. My husband liked it but thought it had too much of a tomato taste. I cooked in a crock pot and used a 15 oz can of diced tomatoes seasoned with basil, garlic and oregano. I served it with pasta which we thought worked really well.

Slow Cooker Chicken with Stuffing

We liked this recipe. I used 2 very large breasts so I used 2/3 cup chicken broth and 1/3 cup water and that made plenty liquid. I made as the recipe states but next time would use seasonings on the chicken.

Balsamic Roasted Pork Loin

When I went to make this, I only had 1/4 cup of balsamic vinegar so had to use 1/4 cup red wine vinegar as well. I marinated it overnight. If I make again, I would actually cut the olive oil to 1/4 cup. I may try again and cook in a crock pot or use a tenderloin. I thought it was a little salty but that was from the steak seasoning I used.

Lemony Steamed Fish

Very good low fat dinner with this recipe. I used cod and all the ingredients but eyeballed the amount I sprinkled on the fish. Very nice mild flavor.

Bacon Risotto

This was the first time I ever made or ate risotto and my husband and I were impressed! After cooking the bacon I drained the grease and made the onions, garlic, and rice in the same skillet. I only had 4 cups chicken stock so added a cup of chicken broth to make the 5 cups. I also used white pepper. I would have been happy eating just this for dinner.

Mom's Legendary Stuffed Hamburgers

I only had 1 1/2 pounds of ground sirloin. I already had bacon left over from breakfast so sauteed the onion in a skillet sprayed with Pam. I cannot eat a huge burger like the recipe calls for so I cut up the bacon and added it and the onion into the meat mixture. I made 7 burgers out of the 1 1/2 pounds of ground beef and they were the perfect size for my family. They were YUMMY. Hubby and son loved them.
