Mouse's Macaroni and Cheese

Seemed fine when I pit it in the oven, but after the amount of time in the recipe, it had really dried out. The taste was fine, just dry. I would recommend baking it for less time than indicated.

Roasted Tomatillo and Garlic Salsa

I received two tomatillos in my CSA box this week (just two!) so I set out to find a recipe. I found this one and decided to use most of the other salsa items they gave me; two tomatoes, one jalapeno pepper and one green bell pepper. I also had some garlic. So I pared it down and threw one tomato into the blender with the mix, then diced the other and threw it in at the end. I took another reviewer's advice and added cumin. This is a great salsa and I'm so happy I got to use so much of my CSA produce this week!

Roasted Asparagus and Mushrooms

Quinoa, Beet, and Arugula Salad

My sister and I really enjoyed this salad. I didn't have arugula on hand, but I bet it would be delicious. Instead I used the fresh spinach I had in my fridge. I cut down the oil quite a bit, skipped the onions, and threw in some chopped almonds. This even kept well for lunch leftovers the next day!

Caramelized Brussels Sprouts with Pistachios

This was a surprising dish, we really loved it! In fact, one of my sisters threatened to eat it all if the third sister didn't arrive soon! I had only white onions on hand, so I used those. I also cut down the amount of onion. I used pecans in place of the pistachios because that's what was in the house. It's a pretty versatile dish.

The Best Rolled Sugar Cookies

I followed others' advice by eliminating some egg and flour, and also refrigerating the dough for 1 hour. Next time, I will refrigerate for less time as it was a bit too tough to work with. However, it DID work without too much frustration and the cookies turned out nicely.

Beth's Spicy Oatmeal Raisin Cookies

This is a pretty darn good cookie. I left out some of the cloves, since I know cloves can be pretty overpowering. I also added some nutmeg. Instead of raisins, I added pecans. Good stuff!

Evil Cookies

I made these into cookies instead of cookie bars and got almost 4 dozen servings. Not sure why this recipe says 12 servings. Those must be very large servings! I ended up baking them for about 19 minutes, until they were browned on top. They're a little crunchier than I like, but still a decent cookie. Not irresistible, which I guess is a good things in my house =)

Soft Frosted Sugar Cookies

I really wanted a cut out cookie, and as written, this is not it. However, I dumped approximately one more cup of flour in, mixed, then refrigerated for 30 minutes or so. That did the trick, they rolled and cut easily then. I also wanted more of a frosting 'glaze', again, as written, this is not it. I was too tired and frustrated to thin the frosting out any further, so I simply spread it on. I did add almond extract to the frosting, as that is what I've enjoyed in frosted sugar cookies in the past. The cookies tasted great!

Easy Batter Fruit Cobbler

This came out beautiful. I guessed on how much fruit I was putting in, but I doubled the recipe and used 3 large peaches, about 3/4 pound fresh strawberries and about 3/4 pint of blackberries. I also took others' advice and used less butter. Additionally, I swapped Splenda for the sugar. I forgot to sprinkle sugar on top, will do that next time. My cobbler turned out fruity, warm, and a bit custardy on the bottom. We loved it!

Banana Sour Cream Bread

I made a few changes to this recipe that seemed to work well. I used 3/4 cup of no sugar added peach flavored applesauce (it doesn't affect the flavor) instead of butter. I had 4 egg whites, so I used those in place of the eggs. I cut down to 2 cups of sugar and I think it was plenty sweet. Lastly, I didn't make the topping or dust the pans with sugar. I ended up having to bake for about 20 minutes longer because of the changes, but it turned out nicely and you'd never know it was lower in fat.

Pecan Rice

I loved this. I wanted my guests to leave and give me some alone time with this rice, I liked it so much! Instead of margarine, I used wild mushroom and sage infused olive oil. I used leeks for my onions, dried parsley instead of fresh and skipped the ginger entirely. I also added diced celery and mushrooms. While boiling the rice (for probably close to 90 minutes), I added chicken bouillon cubes. I will make this again, and probably soon!

Crustless Mushroom-Spinach Quiche

This was good, except I guess I don't like spinach in my quiche. I used fresh because that's what I had. Next time, I will stuff it full of other veggies and skip the spinach. I used more egg, less ricotta, and used veggies I had in the house. It's pretty versatile, it worked out well.

Four Cheese Margherita Pizza

Great recipe. Didn't have fontina or feta, but it was great without it. I let my tomatoes marinate for hours, and included a splash of black cherry balsamic vinegar. I also added the minced garlic to the pizza after marinating - that seemed a bit overwhelming (still good though!)

Tofu Parmigiana

This was ok. I followed some other reviewers' advice and froze the sliced tofu before breading, then baked. I don't know how anyone could ever mistake this for chicken, but it was decent. It was a good way to use up the remaining tofu I had in the house, but I won't likely make it again.

Green Bean and Mushroom Medley

I skipped the butter and used a little Sage and Wild Mushroom Olive Oil, then seasoned with basil, oregano, sage and black pepper, skipping the salt altogether. Turned out nice.
