Tofu Parmigiana

This was ok. I followed some other reviewers' advice and froze the sliced tofu before breading, then baked. I don't know how anyone could ever mistake this for chicken, but it was decent. It was a good way to use up the remaining tofu I had in the house, but I won't likely make it again.

Delicious Baked Chicken

This was ok. I took someone's advice and marinated it for sometime - so it wasn't dry. I followed the recipe and it was fairly salty. I probably won't make this again.

Green Bean and Mushroom Medley

I skipped the butter and used a little Sage and Wild Mushroom Olive Oil, then seasoned with basil, oregano, sage and black pepper, skipping the salt altogether. Turned out nice.

Caramel Apple Pork Chops

Fantastic! I followed the recipe exactly, skipping the nuts because of weight watchers. This was surprisingly low in points using light butter (5 points w/o nuts). I also used fresh grated nutmeg (slightly less, it's more potent). I will definitely make this again!

Easy Morning Glory Muffins

These turned out great. I deviated a little bit, based on personal preference and what I had on hand. I doubled this recipe. Instead of all that oil, I used three bananas and a half cup of oil (reduced the oil by 3/4 of what the recipe called for). I also reduced the sugar by half a cup, but I believe that I could drop it down quite a bit more. I do not like raisins, but chopped, fresh, Medjool dates substituted very nicely. I also replaced 1/4 of the flour with whole wheat flour (I think I'll bump that up next time too), and 1/4 of the flour with a combination of almond meal and flaxseed meal. I know I made a lot of changes, but I was really trying to make it a bit healthier. It was really great, very moist and tasty!!

Sesame Rice

This was great! It has a nutty flavor. I only had basmati rice in the house and I used my own homemade broth to cut down on salt. After sauteeing the sesame seeds, celery, onions and rice, I added the broth to the pot and brought it to a boil. Then I lowered the heat, covered and continued cooking on the stovetop for about another 15 minutes. Perfect!

Famous Butter Chicken

I cut down on the butter as others mentioned. I didn't really measure it, so I may have cut it by more than half. I sort of went overboard on the seasonings, so next time I think I'll stick closer to the recipe. But I really liked this, the chicken stayed juicy and tender and it really was easy!

Chicken Fried Chicken

Really easy, quick and tasty recipe. I had this, mashed potatoes and corn on the table in a little over an hour. Next time, I won't cook the thinner pieces as long as they burned and dried out slightly. My own fault. I took others' advice and dredged in flour, then egg, then the cracker mixture, then into the hot oil. The flavor/seasoning was great (I also added a bit of garlic salt). Thanks!

This was ok. It was lacking in flavor. Because I needed to thicken it up, I threw in a potato and I also seasoned with salt, pepper, and garlic/wine seasoning from The Melting Pot. It made it slightly better.

Cheese Souffles

Easy and tasty side dish! I left out the cayenne on personal preference. Each time I make this, I forget to look at the serving size. I don't have 10 ounce ramekins! Mine are more like 4-5 ounces and then I end up with more souffles than people! Turned out ok last night, my guests ate two each =)

Beet Bundt Cake

I'm torn on this review. This cake was a lot of work, very tedious. It smelled amazing (well, until the end when it smelled like it was burning, but still gooey in the middle). My coworkers loved it with the fresh raspberry glaze I made. I didn't care for it. I needed a good way to use up all the beets I'd been getting from my CSA crop share. I'll probably just cook and eat them with dinners instead.

Candied Salmon

We loved this. I used more garlic and less onion than called for. I'm glad I didn't use as much onion, as we found them too chewy and sticky to eat - but thought they added to the flavor nicely. I'll definitely make this again!

Rhubarb Cooler

Great recipe. I took this to work for our Earth Day pot luck. Everyone seemed to like it, it was gone by the end of lunch, and I had a few requests for the recipe! I seemed to have goofed though. I halved the recipe, but managed to put the whole amount of orange juice and lemon juice. Maybe that cut down the sweetness that the previous reviewer mentioned. Also, I threw in a few drops of red food coloring!

Perfect Sesame Chicken

Skipped the chile paste on personal preference, and used white cooking wine in place of sherry (what I had in the house). This was great, and traveled well to work - in separate containers for the sauce and the chicken, then mixed them once heated.

Kalua Pig in a Slow Cooker

I made this for our Hawaiian luau pot luck in February. My coworkers were surprised when I signed up to bring a 'pig roast'! This was a big hit with the group. It was a big hit with me because it was easy and it traveled really well.

Classic Spanish Sangria

Fantastic! Goes great with whatever fruit you have. I used one lime, one orange, one green apple, and about half a pineapple along with fresh squeezed orange juice. Lastly, I used a sweeter bottle of red wine. This drink will sneak up and kick you in the head, be careful out there!
